Default Grasshopper Mold

I believe the recipe came out of the Dallas Morning News newspaper many
years ago, but can't swear to it? I hate not giving proper credit....

This is a simple dessert yet nice enough to serve at a fancy meal. I
have made this on occasion and it is lovely made and served in
individual martini glasses (instead of a single mold) with crushed
chocolate wafer crumbs sprinkled on top.
The individual servings are more forgiving if it isn't chilled as long
and allowed to set as firmly the mold would be.

Grasshopper Mold

Recipe By :
Servings : 12
Categories : Desserts

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 envelopes unflavored gelatin
1 cup cold water
1 cup sugar -- divided
1/4 teaspoon salt
6 eggs -- separated
1/2 cup creme de menthe
1/2 cup white creme de cacao
2 cups heavy cream -- whipped

Sprinkle gelatin over water in medium saucepan. Add 1/2 cup sugar,
salt and egg yolks. Stir till thoroughly blended. Place over low heat,
stirring constantly until gelatin dissolves and mixture thickens (5 min
or so).
Stir in cream de menthe and creme de cacoa. Chill stirring
occasionally until mixture mounds slightly when dropped from spoon.
Beat egg whites till stiff but not dry. Add 1/2 cup sugar and beat till
stiff . Fold into gelatin mixture. Fold in whipped cream.
Turn into 12 cup mold.
Chill till firm. Garnish top with additional whipped cream and
sprinkle with chocolate cookie crumbs.

Huh!? You need his permission? LOL
Just make a half batch... it will be easy to eat it all up yourself,
trust me. Delicious stuff.

I wonder if one can buy small bottles of the liqueurs? Nice to have on
hand to drizzle over ice cream so you can justify it that way if you
have to buy larger bottles though.

I don't like making desserts just for myself. The man's a prince. If
it makes me happy, he has no problem with anything I want to do or
cook. I like to include him in at least some of those decisions,
though. <G>

I'm not sure about the small bottles of liqueurs. You can count the
times I've been in a liquor store on two hands. But my mom made good
use of both of them making grasshoppers (the drinks). She loved those
things!

Have you ever made grasshopper pie? I haven't made one in years, so I
looked it up. There are a lot of versions, but I remember using
marshmallows (here's a way to use up that bag of leftover
marshmallows... from the yam casserole).


Grasshopper Pie Recipe

Serves/Makes: 10

Ingredients:
1 1/2 cup chocolate wafer crumbs (Oreo works best)
1/4 cup melted butter or margarine
32 large marshmallows
1/2 cup milk
1/3 cup creme de menthe
1 1/2 cup whipping cream (unwhipped)
2 tablespoons creme de cacao

Directions:

Heat oven to 350 F. Mix butter and crumbs and press into 8" baking
pan. Bake 10 minutes and cool completely. Melt marshmallows and milk
in saucepan over low heat. Chill till thickened. Then stir in both
cremes. In a chill bowl, whip cream till stiff. Fold marshmallow
mixture into whipped cream. Pour into shell. Chill 4 hours in freezer
or overnight in refrigerator. Serve cold.

This recipe for Grasshopper Pie serves/makes 10

This makes me want a regular grasshopper cocktail but made with ice cream.
They are sooooo good. No buzz in it, but it's a great dessert!
