The first and only pie I ever made from scrach (except the pie crust) was a

Good for you. Whipped cream (use powdered sugar instead of granulated, and it will hold its shape a long time) is better, I think, than meringue, which doesn't like to be a leftover. Regardless of appearance, I bet it tasted great. ;-) N. |

I have a "key lime" tree in my backyard, next to the Persian lime tree (loaded with ripe fruit) and in the same general area as the Meyer lemon tree (ditto) and the tangerine tree. I have a knack with both pie crusts and biscuits, but I spent a lot of time watching my mom make them, and then spent a lot of time working at making mine just as good. I've taught a few friends how to make pastry and they do it well. It costs me less than half as much to make two pie shells as it does to buy one. It takes me less than 5 minutes to make a batch of dough and another 4-5 minutes to roll it out. The results are so much better than I would not even thing of buying it already made. |

Last year I had to make ten pies for thanksgiving, so I was going to be lazy and buy frozen or pre-made pastry to use... until I picked up the box and read the laundry-list of ingredients - pastry is only supposed to contain flour, butter, a little salt, and water (with egg and sugar if you want to make it richer)... the ingredients list should NOT take up half the side of the box! |

Basically flour and vegetable shortening, with small amounts of yeast and baking soda. The only oddball was soy lecithin. Brian |

They are probably the best that I have tasted, but they fall far short of a proper home made pie. Good pie dough cannot me made in a machine. It has to be hand made. Then there are the fillings. Those fillings that come out of a can or a tub are vile. My favourite pies are sour cherry and rhubarb. I have never tasted a commercially made filling made from either on that is fit to carry the name. |
