Default New survey on the RFC site: Pie...

The first and only pie I ever made from scrach (except the pie crust) was a
keylime pie! It was delicious except it separated into slop after a night
in the fridge.

Of course I did! (insulted) And I used real keylimes!!! You can see the
zest, can't you? I couldn't botch a keylime pie with lesser limes, now
could I?

I did make a keylime pie with meringue but it also wilted in the fridge,
dammit!!!

Frozen pie crusts ? What will they think of next?

Mind you for anything under 5kg of flour and a kg or so of lard it is
difficult to tell my pie crusts from my shoe leather.

I could tell you used real Key Limes, as the color is more yellow than
green. Good for you. Whipped cream (use powdered sugar instead of
granulated, and it will hold its shape a long time) is better, I think,
than meringue, which doesn't like to be a leftover. Regardless of
appearance, I bet it tasted great. ;-)

I have to say, I'm sooo lucky to have her in my life. We've been
friends since Kindergarten (that's 37 years!), and the funny thing
is she thinks *she's* the lucky one. She's a lovely person...

I have a "key lime" tree in my backyard, next to the Persian lime tree
(loaded with ripe fruit) and in the same general area as the Meyer lemon
tree (ditto) and the tangerine tree. The KL tree hasn't actually provided
me with any fruit yet, but hope springs eternal.

I find it amazing that more folks do not make their own pastry. If I'm going

Well, I do understand. I have a knack with both pie crusts and biscuits,
but I spent a lot of time watching my mom make them, and then spent a lot
of time working at making mine just as good. I've taught a few friends how
to make pastry and they do it well. I think it's something you can't
easily learn from a recipe or book, but requires hands-on instruction and a
lot of watching.

I would, but I seriously stink at making pie crust. I've
tried -- I just don't have the touch, they always wind up
tough. If my Mom was still alive, I'd have her walk me through
it again, but...

For the last few years, I have used frozen crusts because I really
like the way they turn out, and they're so freakin' easy to use. But
then I made the mistake of reading the ingredients. Back to homemade
for me, next time I make a pie.

I had a good teacher. My brother taught me how to make pie pastry
years ago. It costs me less than half as much to make two pie
shells as it does to buy one. It takes me less than 5 minutes to
make a batch of dough and another 4-5 minutes to roll it out.
The results are so much better than I would not even thing of
buying it already made.

I had a coupon for Mrs. Smith's frozen crusts, so I gave them a try.
Not bad, actually. They're good for taking a pie somewhere, like the
work communal feed, because you don't have to worry about the pie dish.

I don't make pies very often because I have this mental block about
pastry - I have TWO incredibly easy super-quick-to-make recipes (one
quick-mix savoury, and one 'sweet biscuit'), but I always seem to
think of them as taking 'a long time' and being 'too messy'...

But when I do have a yen for pie I make my own pastry from scratch -
my stomach doesn't handle fat well and bought pies inevitably disagree
with me.

Exactly! Last year I had to make ten pies for thanksgiving, so I was
going to be lazy and buy frozen or pre-made pastry to use... until I
picked up the box and read the laundry-list of ingredients - pastry is
only supposed to contain flour, butter, a little salt, and water (with
egg and sugar if you want to make it richer)... the ingredients list
should NOT take up half the side of the box!

I must confess, I love disposable pie plates and baking dishes! They
make life so much simpler for taking stuff places...

I never considered if store bought pies have any more fat than homemade,
but the crusts tend to be soggy and kinda rancid tasting to me. If I'm
going to eat fattening pie, at least it can be fresh tasting with a nice
flakey crust instead of that soggy bottomed pie crust possibly made days
before?

I have to agree that ready-made store bought pies are not something I
like - in fact I have given up buying them. On every occasion that I
have eaten them its been "heartburn city" for me.

The Mrs. Smith's ones I got were pretty good ingredient-wise. Basically
flour and vegetable shortening, with small amounts of yeast and baking
soda. The only oddball was soy lecithin.

It seems a shame to spend a lot of time on the pie filling and
then stick it into a mass produced frozen pie crust.

I don't buy pie fillings and I don't buy pie shells or ready made
pies. I have tasted enough of them to understand why so many
people don't like pie as much as I do..

They are probably the best that I have tasted, but they fall far
short of a proper home made pie. Good pie dough cannot me made
in a machine. It has to be hand made. Then there are the
fillings. Those fillings that come out of a can or a tub are
vile. My favourite pies are sour cherry and rhubarb. I have
never tasted a commercially made filling made from either on that
is fit to carry the name.
