Default Lime Jello w/ cottage cheese

OK, I admit it. I'm a Jello dummy. I've always liked it, but
evidently not enough to actually make it. I haven't made a box of
Jello in over 40 yrs. LOL...

Anyway, I'm committed. I got the Jello, I got the cottage cheese. The
water is hot and waiting. Now what? The problem is the water to
Jello ratio of 2 cups per 3 oz of Jello powder indicated on the box.
But, when I look on the web, most recipes say only 1 cup water per 3oz
powder. I know there should be some lessening of liquid when fillers
are added, but have no idea what the rule of thumb is. Let's hear it
out there, you Jello junkies. How much water do I need for a 6oz box
of Jello w/ 16 oz of pineapple-cottage cheese?

nb, I have no idea what you're thinking. I am reminded (sadly) of the lime
jello recipe I found in a 1970's Southern Living cookbook which said to
blend lime jello with canned tuna. Oh gross and yuk and hurl! Don't add
that stuff to lime jello! Just don't do it!

LOL!!!

Too late. I'm having mid-life flash backs to a time, real or
imagined, when lime cottage cheese and red fruit cocktail Jello was a
staple, even in restaurants. I may have a lovely experience or end up
going, "What the Hell was I thinking!". But, I gotta do it. I bailed
at the last minute the other night because the cottage cheese wasn't
right. Some kinda runny oozy crap which I tossed even though it
wasn't bad. Now I wonder if anyone even makes good cottage cheese
anymore. I haven't eaten c/c in years and can't say why. I've always
liked it.

Well, nb... I'm gonna take pity on you and give you an old family
recipe. Consider it a starting point and do with it what you will.

Eisenhower Salad (that's what they called it)

1 (16-oz) carton of cottage cheese
2 cups mayonaise
1 med. can crush pineapple (drained)
1 cup chopped walnuts
1 pkg (the small size) lemon jello
2 packages (small) lime jello

Disolve the jello in 1 cup of hot water and 1 1/2 cups cold water.
Add the cottate cheese and mayonaise.
Mix well.
Add the pineapple and walnuts.
Mix again and refrigerate.
When partially thickened (about 1/2 set), stir to prevent sinkers.
Chill until fully set.

I'm going to hang out in the chat channel for a while, if you have any
questions about the fine points of jello salad. LOL

Each to own and all that. I've never made it, but I've eaten it and it
tastes pretty good. I don't understand people and Jello, I guess.

Here's one of my favorites, and if I make it for the family, they make
fun of me and then clean it all up.

Lime Jello Salad

Put 16 big marshmallows and 1 C. milk into top of double boiler over
simmering water. Stir until the marshmallows are melted and
incorporated into the milk. Sprinkle 1 small package of lime Jello
into the hot mixture, and stir until dissolved. Add 2, 3-oz. pkg. of
cream cheese, cut into small bits. Stir until the cream cheese is
melted and mixed in. You might have to remove the mixture from the
stove to prevent burning. Add in one # 2 can of crushed pineapple WITH
juice. Mix 1 C. whipping cream, whipped (use Cool Whip, if you want,
it will be more stable) and 2/3 C. mayonnaise. Mix all together and
chill until firm. Cut into squares and serve.

Hopefully no one will have questions about the fine points of this. It's
almost as bad as canned tuna in lime Jell-O. And this you cannot put in
martini glasses and say it's okay!

Actually, it's one of those "don't knock it until you've tried it"
things. I'm not a fan of jello salads in general and I'm certainly
not a fan of mayonnaise, but it's not as bad as you and Tammy seem to
think it is. Like I said... it's a family recipe (I'm not making it
up) and it appears at big family parties. Often, I'm the one who
makes it these days.

closer to ME, but that jello thang is just VILE! And I get to have my
say, woman, you just shut yer pie hole. Better yet, go make some
cherry chipotle relish and some corn relish and SEND ME SOME.

Do you have a recipe you're following? The basic premise as I remember
it was to dissolve the gelatin (a 3 oz package) in 1 cup boiling water
(or fruit juice if things were going that way), stirring until
dissolved. Then you'd add the cold liquid (usually water, maybe fruit
juice or soda), in whatever amount the recipe called for, and chill
until it was the consistency of egg whites; then add the other
ingredients (cottage cheese, vegetables, fruit cocktail, whatever
direction you were headed). Chill.

I remember a shortcut to the basic procedure, too. Do the boiling
liquid thing and for the second cup of water, instead stir in 6-8 ice
cubes, stirring until the gelatin began to thicken. Remove the unmelted
ice and proceed to whatever destination the train is going. I haven't
seen that method on the boxes for years, though; it speeded up the
setting time considerably.

If you're hellbent on reducing the liquid due to the addition of extra
ingredients, reduce the cold water by 1/4 cup.

If you think your cottage cheese is too wet, dump it in a dish towel and
wring out some of the liquid.

And don't listen to Tammasita, fercryin'outloud!

I want a report. Since you don't know what you're doing, a recipe to
follow might be nice for you.
