Default Easy Low Carb

I just got my cholesterol checked and my triglycerides are through the roof.
I'm going on a low-carb diet as a result and would love to hear from the
creative folks here about easy (quick) low carb recipes.

Before you go low carbing it you sure your Triglycerides are not high from
eating to many sweets? Just something for you to think about.

I've been on low carb for about fifteen months and my cholesterol and
triglycerides have shown dramatic improvement. I started off using the
Atkins book but after a while I abandoned all that weighing and measuring in
favor of this: we have no flour, (or anything made with flour) no starchy
veg, like potatoes, rice, peas and no refined sugar. This leaves meat,
fish, eggs, cheese, unstarchy veg, butter, olive, canola, peanut oils and
any seasonings you like. Tons of opportunities for different recipes.

great (and sometimes not so great) words of knowledge:

As an AID to help on your low carb diet, check out the carb/starch
blockers - they are an extract of the white kidney bean. They are not a
"magic bullet", but they do help. They will allow you to have that
OCCASIONAL piece of bread or baked potatoe without blowing the diet.

I just got back from 3 weeks vacation. During the vacation I ate
everything (potatoes, bread, pasta, ice cream, ect.) - I only put on 8
lbs. and my triglyserides (sp ?) only went up 6 points. I usually put
on 15 - 20 lbs when on vacation. I do feel that they definitely
prevented a lot of the weight gain.

I have been "low-carbing" on and off for about 5 years - consistently
for the past 2 years. I have been following Suzanne Somers' plan,
which also allows fruits, but eaten separately from other carbs and
especially meats and fats. I now weigh what my driver's license has
stated for the past 28 years...hehe.

Check out the vitamin/health food stores. Lately, the ones in my area
have been stocking tons of baking mixes, extracts, carb blockers (the
wonderful white bean extract), cookies, chocolates, condiments and
anything else that supplements a low carb lifestyle. It's truly easy
(has to be or I wouldn't do it) and healthy - and with a little
creativity, Splenda, guar and xanthan gum, many recipes can be adapted
to fit the lifestyle. Substituting nut flours and whole grain flours
for white in recipes takes some experimentation, but the results are
well worth it. My downfall from early childhood has been cookies and
breads - and a good dish of rich ice cream. I found some amazing
substitutes for all three. ( Btw - Keto is a brand that I trust for
great flavor and texture in their products).
