Has anyone told you that your Blue Cheese-Carmelized Onion Squares are
in photos on AFB? Nick Cramer's wife made them (he calls them
something else though) and oh boy do they ever look good!

They were on my to do list for xmas dinner and that confirmed it.

Hey, you read and post enough to stop using google as your main news
reader. Why haven't you done it yet? At the very least, you could
add Thunderbird on to your Netscape.

I was thinking of making some of these for Christmas dinner as
well....

I can't see the photos..the German server I use doesn't get that
group..

It was Fosco's wife, Diane, who made them, but I didn't know it was Jude's
recipe! I drooled at the photo, but my server doesn't have it anymore.
Shoots, my server doesn't even show posts from noon today on!

Sorry I screwed up with who made it & photographed it (slapping
forehead) Sheesh - his name is ON the picture. Down thread, Fosco
said the recipe came from Gourmet magazine and if I remember correctly
Jude also mentioned Gourmet somewhere in the rfc thread. In any case,
they remain "Jude's" to me although Fosco is the afb OP.

Those appetizers do look very good. I am definitely making those... I
could use some right now, in fact...but I don't want to use up my
onions and blue cheese before Christmas. I am not going out in this
weather until I have to: we had a major snowstorm (for Albuquerque)
and roads are icy... Still snowing a bit...

Nearly 50 degree high today, Christine, but that last two mornings
have been absolutely buggery cold (for here) - it was 22F in
Marysville yesterday morning! 28 here. I fear for my citrus trees!

Cuz I'm on an old mac, os (, and I can't download anything anymore. All
the current software, updates, support are for OSX. When we tried to
install it, it made my computer crash and we're still trying to debug
things to make OSX run. In the meantime, I'm on a dinosaur. Google's
about all that works for my old fogey.

(ps, yes I did mention Gourmet. Can't take credit, only raved about

These were a big hit. I made the onions a few days ahead so it took no
time to prepare the crust and bake these for starter nibbles. They went

fast!

Blue Cheese-Carmelized Onion Squares

CRUST:
2 c flour
2 tsp baking powder
1 t salt
3/4 c milk
1/4 c olive oil
2 Tbsp melted butter

TOPPING:
2 Tbsp butter
2 Tbsp olive oil
3 large onions, thinly sliced
1 Tbsp finely minced fresh rosemary
1 tsp sugar
1/2 tsp salt
6 ounces blue cheese

FOR CRUST:
Preheat oven to 425 degrees.
Mix flour, baking powder, and salt in medium bowl.
Make well in center of dry ingredients.
Whisk together liquid ingredients and pour into well, stirring until
smooth. Roll out dough to 10x13 rectangle and transfer to rimmed baking

sheet, OR pat onto baking pan, like I did.
Prick dough with a fork and let rest while preparing topping.

FOR TOPPING:
Melt butter and oil in a large skillet. Cook onions in butter and oil
over medium heat until soft and beginning to brown, approx 10-12
minutes.
Add rosemary, salt and sugar; season with pepper. Continue to cook over

medium heat until onions are soft and dark brown, about 20 minutes.
Spread onions over dough. Crumble cheese over onions. Bake 20 minutes,
until cheese is melted and bubbling.
Cut into squares and serve warm.

It's cold here too. Not as cold as where you are, but let me tell you
- even with the furnace cranked up to 65° (it's an 80 year old house
with no insulation in the walls) my toes are screaming!

I'm going to do it on my pizza tiles.... at least the first bake. If
the bottom is brown "enough", I'll transfer it to a pan to finish so
the bottom won't over cook. My end result will be browner all over
than what is shown in Fosco's pictures.

The guy at the cheese counter reccomended a 'buttermilk blue". I asked
for something mild and crumbly. It was excellent, but I can't tell you
anything else about it, sorry.

ObFood: Stracciatella alla romana, broth with eggs and cheese. It is a
very simple, even primitive, but very tasty soup and it is similar
enough to zuppa alla pavese, so that even born-and-bred Italians who
ought to know better are often confusing the two, or making a kind of
hybrid version while using one of the traditional names. Hint: zuppa
alla pavese contains bread, stracciatella doesn't; eggs in zuppa alla
pavese are poached whole, in stracciatella they are in strands. Here is
a recipe from _Cucina Italiana_, compiled by the Accademia Italiana
della Cucina.

Stracciatella alla romana

1 l (1 quart) meat stock
3 eggs
4 tablespoons grated Parmesan
salt
some nutmeg, to taste

With a fork, beat eggs, Parmesan, nutmeg, and salt thoroughly. Bring
the stock to a boil in a saucepan. Slowly pour in the egg mixture while
lightly stirring with a whisk, so that the eggs start building strands
(stracciatelle). Continue to simmer for a few more minutes and serve at
once.
