Default BUM Spuds!!! II

I got some organic russet potatoes on 12/23 at Whole Foods and today
(12/28), they've sprouted roots!?!

That's pretty quick.

The only thing I can figure is I had them sitting in the sealed plastic bag
I put them in at the store. Maybe a "greenhouse" effect sped up the
growth??

Between these and the ACME brand from a couple weeks back, I don't know
where to turn for spuds anymore. Maybe switch back to yukon golds. They
don't sprout roots, they just turn to gross! (See: "The Kitchen Stink"
thread).

Oh, and adding insult to injury, I made a last second decision and turned
three baked into rather gummy mashed potatoes for lunch. I still ate it,
but they were NOT my best. If I'd had company over, I'd've claimed the
chimp made 'em.

On the other hand, I bought a ten-lb bag of russets from Kroger for $2
and they were/are amazing. I love potatoes best just boiled, with a bit of
butter and salt and pepper. But they have to be russets. I am having
leftover boiled russets, collards, and a thin slice of ham for lunch.

Geez... $2.00/10 lbs. is a fantasy around here!!!

I added a chopped up buffalo medallion to the mash like I did when I was a
kid. If I had any more kid-sense, I'd have piled it in between two pieces of
buttered toast (which I also did as a kid.) The rest of the family would stop
and watch in disbelief! I was told I was the adopted one.

Do you have Kroger? This was a special, "2 for $4" but you don't
HAVE to buy two, see?

I cannot imagine why you would not have sales like this were you are.
Where are you again? (I think I used to know this.) I am in Raleigh, NC.

Commercial potatoes are sprayed with a chemical (Malic Hydrazine?) to
prevent them from sprouting in storage. Organic potatoes should not have any
chemicals and hence will not keep as long. I keep my potatoes in a root
cellar close to freezing where they stay in perfect condition for a year or
more.

What country are you in? I was never aware that potatoes were sprayed with
that sort of treatment here in the U.S.A.

Andy - at what temperature are you storing your potatoes? You want to
keep them at about 40°F, IIRC.
