Default ham and eggs

What a beautiful breakfast! Do you prefer your ham in your scrambeled
eggs, on the side, or in an omlette? Today I made some with the ham
incorporated and it was a nice change from my usual steamed eggs or
boiled eggs, although I find the ham taste overpowering. Served with
toasted Ciabatta bread (no fat!), butter (gotta have some fat!) and
some lucious pineapple-apricot preserves (Melba are you listening...?)
Oh, and Dole's Mango-LimeFiesta juice is very tasty.

Breakfast - the best meal of the day!

I prefer mine not to be cooked with a phone call from the
neighbour in the middle of it. I had bought a ham steak for
breakfast and my wife offered to cook it. Just about the time
that the ham should have been ready the telephone rang. Thanks to
call display I yelled out that it was for her. I thought she
would deal with the neighbour, tell her that she was too busy to
cook..... then the house started to fill with that overcooked ham
smell.. so it turned out sort of like a piece of plywood.

It really is good! Last weekend I thawed some plump chunks of the Smithfield
Christmas ham I had frozen right after it came out of the oven on the 23rd,
and diced it and fried it lightly in olive oil then dumped the eggs right on
top and cooked them there.

The key to making this really delicious is not to overdo the ham. The
flavor really carries in eggs and complements that of the eggs, and one
thing that makes this dish so nice is just consistency.

Then I made hash brown potatoes, SO fattening I don't do it much.
From fresh chunked russets, a whole sweet onion chunked and tossed
in after the potatoes browned some. Served with a dollop of Sour cream!

Served with

Actually, I am the only person in my family who doesn't care for ham in most
instances. There is a particular ham, that we get once a year or so, that is far less
salty and I will eat that with some good BBQ sauce on a toasted roll. And every once
in a while I will eat a slice or two of deli ham in a sandwich (only black forest ham
though)...
Other than that, I really don't eat it. I do like good sausage (pork) on the side
when I have eggs, or side pork, but that's near impossible to find around here.

Yesterday I made whole grain pancakes for breakfast. To the batter I added some
Penzey's Vietnamese cinnamon and some vanilla bean paste, and subbed melted butter
for the oil called for in the recipe. I really just wanted something to serve with
the cranberry orange butter I got at the farmer's market the day before! lol I also
made Kona coffee pancakes with mini chocolate chips in them, at the behest of my
eldest son. I accompanied the pancakes with sausage links, scrambled eggs with
cheddar cheese, and fresh Cara Cara orange juice (since I just bought a huge bag of
them at Costco!). It wasn't something I can eat every day, but it was a scrumptious
treat for New Years!

Now see, we always called those "country potatoes". Hash brown potatoes involve very
thin shreds of potato fried up nice and crisp and deep golden brown. Now if you take
your potatoes, leave out the sour cream and add green peppers and cheese, those'd be
Kono potatoes...so named for Kono's on the beach where they make them by the ton! lol

I am much the same way. We bake fresh and smoked hams pretty often - I
don't eat much of it but today threw in the frozen chunks leftover from
Thanksgiving. DS loves ham, so I tend to cook what he will eat, as he
is hard to keep weight on. The kids eats at least 1200 calories a day
and he's not quite 3. While he is a bit tall for his age, his weight is
in the 50-60 percentile for his age. He just burns it off!

This is the way Denny's does it, for sure. (My MIL has to have breakfast
at all odd hours, so it had to be Denny's.)

But I think the people IN the country who were MAKING the potatoes for
the boys who plowed the back 40 probably called them "hash brown potatoes!"

Actually I think cheese on potatoes is an aberration, but that's just me. In fact, I
don't care for cheese on veggies as a general rule. And peppers? Noooooo. Give me
just the potatoes, crisped all over, with a little salt and rosemary.

It was funny, I was just mentioning to my mom how it seemed like they should be in
the stores by now, and not 20 minutes later, we walked into the grocery store and
there they were! I hadn't seen a single one before that.
I love them too, so that explains the Costco bag... ;-)
