On her show as she's making a recipe she said a strange thing. She said "the
recipe calls for cilantro but I hate cilantro so I use basil." I've never heard a TV chef come right out and say they hate something "on the air." Well, except for Bourdain but he just says if the dish as a whole was tasty or not. Ina's recipe on the FoodTV website only lists basil. Made me wonder why she brought up cilantro and her hate of it in the first place. Did the viewers really have to know? Andy |

Some people (hard to believe I know) seem to need permission to alter a recipe to suit themselves. Ina just provided proof that cooking can be pretty flexible. No biggie-da. |

Even though they don't taste the same, they can be interchanged in some dishes. Not all. But, some. That was a disclaimer for the inevitable pusswad that will happen along here soon to dispute what I've said. |

I might like it better with cilantro and hate it with basil..... not because I dislike basil but because cilantro has a real punch and a totally different flavor. The original recipe called for cilantro. She changed it and told us she did. Too bad that decision is not reflected in the published recipe. Personally, I'd never dream of substituting basil in most of the recipes that call for cilantro so I'm interested in seeing it. -- See return address to reply by email |

I think she pointed out the reason her posted and demonstrated recipe varied from the common form of the dish. What was she making? Not many things I can think of would taste right if you switched out the cilantro for basil. I like both, in the right places. --Blair |

Another couple things I don't like for this same reason are wild fennel seeds and aniseed, and I can't stand mint unless it's in a mohito (if I find it in a roast, I run to the toilet), but I like a couple of aniseed liquors. The more common substitute for cilantro is parsley, but I guess she prefers it with basil. Basil is good stuff and I don't see a problem with her giving viewers alternatives. Recipes do not need to be written in stone. There are a few dishes that I do regularly where I switch the herbs. |

Of all the foods I've seen prepared on tv, that is one disgusting mess. Huge chunks of chicken as well as huge chunks of red and yellow bell peppers and made so thick that nothing flows. I've often wondered what Patricia Wells (her house guest) thought when offered this dish. I would think the Contessa could put any seasoning she wanted into this dish. Just my opinion, but it is my reaction every time I see this episode. The combined colors of the dish are really unappealing. Janet |

I don't often watch her show but I have to agree that, despite her attempts to set a theme with decorations and ornamentation, her food never looks very appealing. However, I have a nephew who adores the woman and follows a lot of her recipes. My brother raves about every meal his son cooks for them at home using them, as does my mother over some of the Contessa recipe goodies he has baked for her. Over the holidays I has a chance to try a few of them. One of them was a beef tenderloin that had been well salted with kosher salt and then baked for about 25 minutes at 500 degrees, cooled slices and served cold. It was wonderful. |
