Default Flounder for dinner

Found this recipe when I (gasp!!!) actually looked in one of my multitudes
of cook books under fish:

Tater Fish
1 lb. of flounder fillets
1 cup of instant potato flakes
1 egg, beaten
2 Tbsp water
2 Tbsp dill weed
salt and pepper to taste
1/2 stick of butter
1/4 cup lemon juice

Melt butter and mix lemon juice into it. Pour half in bottom of shallow
baking pan. Set aside.

Add water to beaten egg in wide, shallow bowl. Mix dill, salt and pepper in
potato flakes on a plate. Dip fish pieces in egg, then coat with potato
mixture. Place in pan in the liquid. When all the fish is in pan in single
layer, pour remaining butter/juice over the fish. Bake in 375 oven for
20-30 (depends on thickness of fish) until fish flakes and starts to brown.

It was good.
