Default Removing fat from form ox tail when making Pho (Veitanmese soup)

This is what I did. I cut what I could before I boiled it in water.
Then I put the pot in the fridge over night and the next morning
removed the top layer of gui stuff. Then I haeted the pot, added lemon
grass and proceeded with making Pho.

By doing what I did as above before adding lemon grass, did I
effectively remove the bad fat stuff. Is that fat-removal worthy
enought of the effort of letting it sit in the fridge overnight? I
perefr to cooking in one sitting.
