It's not too soon to be planning a feast for the Lunar New Year, which
this year falls on Feb. 18th. When I'm cooking rather than going to a restaurant I usually steam a whole fish. (It's bad luck to cut off the head or tail.) This year I'm thinking of making a raw fish salad instead. Called yu sheng, there are many different versions. One that looks pretty easily do-able is from Martin Yan and can be found from the link here, which has other interesting info about Lunar New Year meals: http://www.globalgourmet.com/food/kg...kgk022799.html You can also use raw salmon or tuna for this dish, or if you have squeamish guests you can use smoked fish. I need to do more research about the properly festive way to toss the salad into the air..... -aem |
