Default Freezing spreads?

I'd like to start making sandwiches to bring to work.
Lot of good suggestions from the archives.
I'd like to make chicken or tuna or whatever spreads (mayo, onion,
celery, chicken/tuna) and freeze for later use.
Will spreads (made as above) deteorate if frozen? - Mike
