Default Classic Minestrone

Classic Minestrone

2 tablespoons virgin olive oil
1 medium onion, diced (about 1 cup)
2 medium carrots, diced (about 1 cup)
1 celery rib, diced (about 3/4 cup)
2 medium zucchini, diced
1 garlic clove, minced
3 medium potatoes (about
3/4 pound), unpeeled and diced
3 cups thinly sliced Savoy cabbage
1 (15 1/2-ounce) can cannellini beans, rinsed and drained
1 (141/2-ounce) can diced tomatoes
2 (14-ounce) cans lower-sodium chicken broth
3 cups water
1/2 teaspoon crushed dried rosemary
1/2 teaspoon salt
1/2 teaspoon pepper
Grated Parmesan cheese

In a large pot, heat olive oil over medium heat. Add onion; cook,
stirring occasionally, 6 minutes or until softened. Add carrots and
celery; cook, stirring occasionally, 3 minutes. Add zucchini and garlic;
cook, stirring occasionally, 3 minutes. Add potatoes and cabbage and
cook, mixing occasionally, 3 minutes. Add beans, tomatoes, broth, water,
rosemary, salt and pepper. Cover and bring to a simmer; adjust heat and
simmer gently 1 to 2 hours. Serve with Parmesan cheese. Makes 6 servings.

I'd worried a little about that too but there is chicken broth.
About the only soup that does not have an animal protein that I
am prepared to eat is Gazpacho!

So you're one of those people that won't eat pie unless the crust is
make with lard!

Beats me how you can draw that conclusion! It's rather sad
since I used to love pie but have not eaten it for 15 years
since I went onto a no-fat diet!

I will devour buttery gram cracker crust.

This way, when Im at say.. Pizza hut..
I have a tolerance for their deep fried pizzas.

Yeah, I just knew she was going to toss in some Italian sausage

I like gazpacho, you have to be careful when you order it
scrimpy chefs tend to think it keeps forever, lol

Another no meat soup is Fr Onion.
mmmm, lots of toasty cheese running off the sides, and hearty croutons
in the soup.

I've made it at home with lipton dry onion soup mix.. so quick and
tasty.

Well, the cheese doubtless helps and there often is chicken or
meat broth in it. I think lentil soup, which of course has
vegetable protein, is not bad but I just would not go out of my
way for it

Not even vegetarian lentil soup? That one is delicious with just onion,
celery, carrot, tomato, tarragon, dill, and garlic.

I make drop dead pinto bean soup too. You'd swear there was a ham
hock in it.

Sound good! but I would have add, at the beginning, together with the
extra virgin oil some pieces of bacon (pancetta piacentina!) and of
course, at the end, a snow of parmigiano reggiano
