Spaghetti alla carbonara
Ingredients for 4 persons: 400 g spaghetti 120 g bacon (buy it 1 piece) 4 tablespoon of extra virgin olive oil 4 eggs 40 g scraped parmigiano Salt and black pepper Put a pot with enough water on fire and salt it according to you taste. Cut in small pieces the bacon (no more bigger than 1 cm/pc). In a bowl brake the 4 eggs, add the parmigiano, a bit of salt and grind the black pepper - than shake with a fork and with energy for 1 - 2 minutes. Now, put a large pan at medium heat and let it to warm up, a soon will be lukewarm add the oil and after few seconds the bacon and leave it to get brown (golden !) A soon as the water boil put in the spaghetti and cook them slightly firm - when ready put the spaghetti in the pot at high heat and mix, add the eggs and mix for max 2 minutes! Serve hot!
