Default Dinner Tonight is...

...Tonkatsu Pork Chops! After last night's Domino's pizza, I
want something, well, good. Thanks once again to aem for posting
this method:

Tonkatsu Pork Chops

6 pork loin chops, boneless
2 eggs, beaten
Panko bread crumbs
Mild cooking oil
Salt & Pepper
Flour

Sauce:

Ketchup & Worchestershire, mixed to taste

Cut a few small slits around edges of chops. Place between
layers of plastic wrap and gently pound into thin cutlets.

One at a time, dredge each cutlet in flour, then dip into beaten
egg. Lay in panko crumbs and season each side with salt and pepper.
Heat large frying pan to medium-high, add oil to a depth of about
1/4 inch. Fry cutlets quickly. Serve hot with sauce on the side.

A Kleenex sandwich on white bread with Noxema and broken glass is better
than Domino's pizza. Is it safe to assume you were at someone else's place
and had to politely eat that pizza, or was it your choice?

Japanese style bread crumbs made with wheat flour. I bought some a couple
of weeks ago.

Beats me why they're so expensive - 3 times as much as ordinary bread
crumbs. I wasn't that impressed!

Some people call here them a "fad", but I love them -- they're much
crunchier than regular bread crumbs, especially in a dish like
this...

It was our choice, I'm sorry to say. None if us really like Domino's
that much, but we were working hard all weekend (see "OT - New
System"), we just wanted someone to bring us food. Unfortunately,
the only places around here that deliver are pizza joints -- Pizza
Hut, Domino's, and Godfather's. PH and Godfather's have burned us
with late, cold pizza, so the only place DH will deal with now is
Domino's. Yuck! Not that the other two are any better.

We used to have a wonderful, old fashioned pizza place here, but
they closed in the early 90's for health code violations...

Yeah, and I suspect they were minor ones, but enough of them can
put a relatively decent place out of business. We didn't get any
of the chain pizza stores until this place was gone. Hmmm,
suspicious...

I first heard about them here -- tried them in meatloaf and fell in
love. They don't cook up as dense as regular crumbs. When we started
making Tonkatsu, we liked it enough to serve it to several friends
and relatives, all of whom were unaware of panko. After trying it,
they liked it enough to buy it themselves. Although I do agree with
Elaine, I don't know why it's so spendy...

They're not a fad, IMO, they're a necessity. LOL. I discovered them about
15 years ago and it's all I use for breading. They *are* so much crunchier,
light, tasty and they're easy to use. I love them.

They aren't really bread crumbs. They are made by spinning a batter through
a mesh and flash baking them. They are indeed much crunchier than bread
crumbs. You can't make decent tempura without using panko crumbs.

Finally my store actually sells them. Took several decades but change is
never easy.

Only when it comes to trivial stuff. For example, I can kick ass
at Trivial Pursuit and Jeopardy, but I still find myself groping
for a particular word at least 5 times per day. Maybe I'm just

Damsel could not get them where she is... I got them at a local grocer.
I guess they must be good because she was willing to pay the postage for
me to mail them to her. :-)

Of course there were other goodies in that package too that she wanted
from the asian market... <G>

It went at cost! Dams' is my friend. :-)

I have not tried Panko yet but it's because I try to live low carb.

Calamari is hit and miss IMO. I flour and let sit for a few minutes,
dip in egg and flour again and fry. I wouldn't use panko. But that's
just me. <g>
