...Tonkatsu Pork Chops! After last night's Domino's pizza, I
want something, well, good. Thanks once again to aem for posting this method: Tonkatsu Pork Chops 6 pork loin chops, boneless 2 eggs, beaten Panko bread crumbs Mild cooking oil Salt & Pepper Flour Sauce: Ketchup & Worchestershire, mixed to taste Cut a few small slits around edges of chops. Place between layers of plastic wrap and gently pound into thin cutlets. One at a time, dredge each cutlet in flour, then dip into beaten egg. Lay in panko crumbs and season each side with salt and pepper. Heat large frying pan to medium-high, add oil to a depth of about 1/4 inch. Fry cutlets quickly. Serve hot with sauce on the side. -- Jani in WA |

None if us really like Domino's that much, but we were working hard all weekend (see "OT - New System"), we just wanted someone to bring us food. Unfortunately, the only places around here that deliver are pizza joints -- Pizza Hut, Domino's, and Godfather's. PH and Godfather's have burned us with late, cold pizza, so the only place DH will deal with now is Domino's. Yuck! Not that the other two are any better. We used to have a wonderful, old fashioned pizza place here, but they closed in the early 90's for health code violations... -- Jani in WA |

I first heard about them here -- tried them in meatloaf and fell in love. They don't cook up as dense as regular crumbs. When we started making Tonkatsu, we liked it enough to serve it to several friends and relatives, all of whom were unaware of panko. After trying it, they liked it enough to buy it themselves. They aren't really bread crumbs. They are made by spinning a batter through a mesh and flash baking them. They are indeed much crunchier than bread crumbs. You can't make decent tempura without using panko crumbs. Finally my store actually sells them. Took several decades but change is never easy. Paul |

Damsel could not get them where she is... I got them at a local grocer. I guess they must be good because she was willing to pay the postage for me to mail them to her. :-) Of course there were other goodies in that package too that she wanted from the asian market... <G> It went at cost!
