Default For Christine: Limoncello Chicken

Found this is a local grocery in-store magazine (Raley's/Bel Air).
This particular issue has a number of good recipes. Exactly 1 year
ago, Christine gave me TWO bottles of her limoncello. This recipe is
what's for dinner tonight:

Limoncello Chicken

2 chicken breast fillets, pounded thin
s&p to taste
Flour for dredging
1 TBSP butter
3/4 cup chicken stock
1/4 cup limoncello
3 lemon slices
snipped fresh basil

Season chicken with s&p and dredge well with flour. Melt butter in
medium skillet and add chicken, cook over med heat until both sides
are golden brown. Add stock, limoncello and lemon slices. Cook for
5 minutes more to thicken slightly, pressing the lemon slices with a
wooden spoon to release juices. Top with basil.

Ohmygosh.
I would make this tonight myself, except my limoncello isn't ready
yet. I have a new batch percolating and I don't plan to have it ready
for drinking (well maybe before) until the cook-in.

Let me know how this is.

Christine, who might make something from Mastering by St. Julia, for
the virtual cook-in.
