Default Lidia Bastianich's Mushroom Gratinate - final

Mushroom Gratinate
3 tbsp. extra-virgin olive oil
4 tbsp. butter
6 plump garlic cloves, finely chopped
2 1/2 lbs. mushrooms, cleaned and sliced
1 teaspoon chopped fresh thyme leaves
4 fresh sage leaves, chopped
1 tsp. salt
1/2 cup freshly grated Parmigiano-Reggiano or Grana Padano

FOR THE BASE AND GRATIN
12 thick slices hearty wheat bread, lightly toasted
3 tbsp. soft butter
1/4 cup chopped parsley
1 cup freshly grated Parmigiano-Reggiano or Grana Padano


Preheat the oven to 375°.

Heat the olive oil in the skillet over medium heat and sauté the garlic,
stirring, until it just begins to color. Add the butter and, when it
melts, toss in the mushrooms, sprinkle on the thyme, sage, and salt, and
cook, stirring now and then, until the water evaporates and the mushrooms
start to caramelize. Remove from the heat, then stir in the grated cheese.

Lay the bread slices in one layer in the baking pan to cover the bottom
completely. Spread the soft butter all over the bread and spoon the
mushrooms evenly on top, pressing them down into the bread. Sprinkle the
parsley on and top with grated cheese. Bake for 10 to 15 minutes until the
cheese has browned and the edges of the bread are crisp. Let rest a few
minutes, then cut into serving pieces. Makes 12 pieces.

Nancy, do you have her recipe for Onion Gratinate? I saw her make it
on her show, but when I went to her website, it only refers to her
cookbook that contains it. I'd like her recipe, not a copycat. I'm not
a "seat of my pants" kind of cook and need to have an ingredients list.

I hear ya, and, Yes I have the recipe, I was dithering back and
forth which recipe to make yesterday. I'll post it for you in a bit.

We just had it for dinner, like pizza. A *really* mushroomy
pizza. It's probably better cut into squares for an appetizer.

I've tried envisioning how the recipe comes out. What keeps the
mushrooms from falling off and creating a muddle on the plate? Not that
muddles can't be good, I'm wondering if it is finger food if cut into
small squares.

It's on toasted bread, to start with, so it's not floppy, also the
cheese is melted through the mushrooms, it creates a reasonably
cohesive topping. That's my story and I'm sticking to it. Heh.

It sounds really good. Did you make it on a sheet pan? 12 slices of

If you are not doing it for something fancy, do what I did last night.
Found the sliced poratbellos and Parmesan cheese in the fridge, cut
some rosemary from one of the bushes in the yard and made a serving
for one. Certainly good enough to try again when I can get some
really fresh mushrooms and some fresh sage.

Yup, I lined a baking sheet with the bread. They fit together
pretty well. I toasted the bread that way, too, just put it
under the broiler, flipped the bread to do the other side, done.

I know you can just make a smaller amount, I just made what
the recipe said, and I have a good 6 slices left. I wrapped them
individually and froze them.

Perhaps some sort of veggie, like celery sticks, cabbage leaves,
eggplant slices... how about stuffed into bell peppers and baked?
