Default Asparagi alla Parmigiana

Asparagi alla Parmigiana

2.2 lbs fresh or frozen asparagus
1/2 cup butter
1/2 cup grated Parmesan cheese

Frozen asparagus does not need to be cleaned.If you are using fresh
asparagus, clean them by rasping off the dirt on the bottom of the
stalks. Rinse well and cut to the same length. Tie them together and
boil in salted water for about 20 minutes. Strain, untie, and divide
into two bunches that you will place on an oval serving dish with the
tips facing inwards towards each other.
Melt the butter in a pan and when it starts spluttering pour it over
the tips and sprinkle with abundant grated Parmesan cheese.

Glad I am not the only one who thought perhaps they were aiming for
Asparagus mash. I make asparagus (with a bit of balsamic vinegar and EV
olive oi, then some fresh grated parmesean) to go with dinner last night and
only cooked it about 4 minutes and it had a very nice flavor and texture.
Don't think I was to try it cooked into mush.

Pshaw! Mom used to boil it for a half hour minimum. When times started
to change, I saw her, in higher priced restaurants, picking at her
asparagus and saying "This isn't done".
I didn't like asparagus back then.
