Default Smithfield ham and grits for brunch

What shall I do with this gift of Smithfield ham, I wondered?

Served it with itty-bitty biscuits and a mess of creamy grits made with a
bit of sharp white Cheddar. True Southerners would have demanded beaten
biscuits but I think they taste like hardtack. My high 'n' fluffy ones went
over well instead.

I remember my mother doing real old Smithfield ham -- back way back --
starting with soaking it in a giant tub. Such a production!

That sounds wonderful. Really, really wonderful.

Smithfield ham is delicious sliced thinly and wrapped around chunks of
cantaloupe.

Ah, the old prosciutto trick! Never thought of that. And guess who has a
ripe cantaloupe sitting on her kitchen counter?
