Dice up a medium-small onion. http://i15.tinypic.com/484iz6f.jpg Cook the onion until translucent. Then mix in 10 peeled and diced Yukon Gold potatoes. http://i18.tinypic.com/2whp46t.jpg Add chicken broth or water to just cover the potatoes. http://i15.tinypic.com/4e1eu7c.jpg Have 4 oz of cream cheese at room temperature and 7 oz of shredded cheddar cheese ready. http://i16.tinypic.com/2w36kw4.jpg Mash the potatoes to the consistency you prefer. I like my soup a little chunky. http://i15.tinypic.com/2mrtkow.jpg Cut the cream cheese into cubes. http://i18.tinypic.com/2ms268m.jpg Add the cream cheese a few cubes at a time. The color of the soup will start getting lighter. http://i17.tinypic.com/437ohhy.jpg Add the shredded cheddar cheese, a little at time. http://i18.tinypic.com/4fu6dm9.jpg The color of the soup will change again and start getting a golden color. http://i15.tinypic.com/2q0odqo.jpg This is where I usually add the green chiles. Just the usual canned diced Ortegas. I'm taking this to work tomorrow and a co-worker can't have chiles so I left them out for her but I will have them available for others. It's soup. http://i17.tinypic.com/2m35hl3.jpg Enjoy.
