Here is my comfort food for you and your family.

Dice up a medium-small onion.

Cook the onion until translucent.

Then mix in 10 peeled and diced Yukon Gold potatoes.

Add chicken broth or water to just cover the potatoes.

Have 4 oz of cream cheese at room temperature and 7 oz of shredded
cheddar cheese ready.

Mash the potatoes to the consistency you prefer. I like my soup a
little chunky.

Cut the cream cheese into cubes.

Add the cream cheese a few cubes at a time.The color of the soup will
start getting lighter.

Add the shredded cheddar cheese, a little at time.

The color of the soup will change again and start getting a golden
color.

This is where I usually add the green chiles. Just the usual canned
diced Ortegas.
I'm taking this to work tomorrow and a co-worker can't have chiles so
I left them out for her but I will have them available for others.
