Bob thinks the idea is great, although he said, "As long as it's a VIRTUAL cook-along." That means that we don't need food at present -- friends and family have been keeping us well supplied -- but the idea of reading about "what we would send if we could, what we think of him and that we love him" is very thoughtful. Please go ahead with it on a virtual level -- Bob will be thrilled to hear about the virtual foods. You're very kind to suggest it. Thanks, Carol I didn't get a response from Chatty Cathy about the rfc website and if she would be able to cover it, so I took Barb up on her kind offer of posting on her jamlady eboard. Bob and Carol read that, so they would have access to what we write and the pictures we send. I cut and pasted the instructions on how to get the info to Barb from one of her earlier postings: "I'm ready to offer my jamlady.eboard.com website to post the pictures and our words. Unless someone's got a better idea, when you make your dish, take a picture or two (not too many, please) and size them down to no more than maybe 150kb (is that reasonable) and send them to me along with the telling of whatever you're wanting to tell. Send them to my name (without anything between my first and last names) at mac.com. If somebody's got another or a better idea, that's okay, too." And she said to me, "Dammit, I'll eat any damn thing that I please. I'm not going to die eating boring food!" Well, she's still with us as lively as ever at age 82. She-crab soup? They said no, too fatty! She said, "You betcha! Give me a bowl of that!" Methinks Bob should enjoy whatever he likes. Jill |

I haven't yet made the copycat Hashbrown Casserole 1 lb. frozen hash browned potatoes 1 large onion salt and pepper to taste 2 pounds colby cheese, shredded 10 oz. can cream of chicken soup Place frozen hash browns in a lightly greased shallow baking dish. Add grated Colby cheese, finely diced onion, one can of soup, salt & pepper. Bake at 350F for about 45 minutes. Bob should love this! LOL Jill |

My father is on his 2nd round of chemo; lymphoma survivor, dontcha know. Bob is not actually *eating* with us, Om. This is a Virtual cook-a-long. Bob is enjoying this vicariously by things read to him by his wife, Carol. I made a nice breakfast which Bob might have enjoyed this morning. A nice 3 egg omelet stuffed with cream cheese and crispy crumbled bacon. Sorry, no photos. I was too hungry and wasn't about to let it get cold while I snapped photos! Drop half of chicken pieces into flour mixture and shake thorooughly to completely coat with flour. Remove chicken from bag, shaking excess flour from each piece. Place coated chicken pieces on a large wire rack set over a jelly roll pan until ready to fry. Repeat coating with remaining chicken pieces. Meanwhile, spoon enough shortening to measure 1/2 inch deep into a 12 inch skillet; heat to 350°F. Place chicken pieces, skin side down, into hot oil, cover with lid or cookie sheet and cook for 5 mins. Lift chicken pieces with tongs to make sure chicken is frying evenly; rearrange if some pieces are browning faster than others. Cover again and continue cooking until chicken pieces are evenly browned, about 5 mins. longer. (Be sure oil continues to bubble; oil temperatures at this point should be between 250°F and 300°F and should be maintained at this level until chicken is done.) Turn chicken over with tongs and cook uncovered until chicken is browned all over, 10 to 12 mins. longer. Remove chicken from skillet with tongs and return to wire rack set over jelly roll pan. How's it turn out ? Sounds alot simpler than cranking up the oven....
