This is a quick and simple one, and not at all authentic, but it's pretty
tasty. CURRIED FISH FILET 2 tablespoons butter 1 medium onion, finely minced 2 teaspoons curry powder 2 filets of sole (flounder, or whatever) 1 cup unsweetened applesauce chutney as an accompaniment Stir curry powder (I use a mix of Penzey's sweet and hot) into melted butter in skillet. Add onion and cook unjtil just wilted. Stir in applesauce. Place fish on top, cover skillet, and simmer gently 5 minutes or until fish is tender. Serve with your favorite chutney. Felice |
