Currently in the crock pot is an idea for chicken that Andy
posted a while back. I've made it before, hopefully this time I won't accidentally break a bowl into the finished dish: Slow Cooked Chicken Thighs - Andy (RFC) 8 chicken thighs, extra fat removed 2 large onions, peeled, cut into 8ths 4 cloves garlic, peeled, bashed Seasonings (Salt, pepper, paprika, cumin, cayenne, etc.) Layer half of the onion chunks and garlic cloves in bottom of large crock pot or slow cooker. Cover with 4 chicken thighs. Season. Repeat with remaining ingredients. Cook on low for 5-6 hours. Serving it with baked potatoes and some veggie, haven't decided yet. For dinner tonight I baked a buncha chicken quarters, that took what, an hour or so max? Used my own "ho' - made" bbq sauce, the result could not have been more tender or flavorful...coulda done this on top of the stove or in the broiler too. Easy as pie... I use my crockpot to make chicken stock and I slow - cook stews and soups in it using chicken as an ingredient, but chicken by itself is pretty easily and quickly cooked using a stove...wouldn't waste my time hauling out the crockpot simply for cooking chicken. And if I did, I'd BROWN those thighs or whatever first on the stove...so you might as well just use the stove in the first place. "YMMV", natcherly... -- Best Greg |

When was the last time you saw a chef use a crockpot to make stock or soup? You've got it quite backwards. The point of using a crockpot last time I checked is so it can slow cook foods all day so you can do other things. Andy |

I've got quite a few chicken recipes. I didn't find his dish appreciably more challenging to make or much more flavorful than my dish. The onions and spices and some of the rendered chicken fat and juices made for a delicious dish served over brown rice and leftovers heated and served with au jus on hoagie rolls for breakfast was also excellent! Sometimes you feel like a nut. Sometimes you don't. ![]() Andy |

But the reason I like doing this style of chicken in the crockpot is a texture issue. It's so tender after stewing for a few hours, and sometimes I'm in the mood for that... -- Jani in WA |
