My mum would call this a "cheat's" way:
(anything that wasn't making it "from scratch")

I used to grow up with my mum making "Junket" ... it was always the highest
honor to choose what flavor tablet she'd use for it.
Only just recently my husband and I found "Junket" tablets (what mum made
stuff from - they have a recipe card in them for rennet custards, icecreams,
etc) and "Junket Icecream" packages (these are new to me - but it's the one
we get to make the icecream - vanilla (the flavor we get) or chocolate
flavored) in walmart (you have to look hard for them - I don't remember
off-hand what aisle they are in.. I automatically 'go there' now!
ironically - it is *not* in with the jell-o and puddings..).
My husband and I love the stuff - so nice and creamy and "home made" taste
(actually really does taste like the recipe my mum used to make - she'd
stand over the stove stirring the mixture - used to think it was the
funniest thing - since icecream came from the freezer (- the weird things
you think when you are 6 or 7!) - I'll remember to ask her for the recipe!)
You can make the Junket Icecream in your icecream maker - or pour it into a
container, and break it up every so often, so it freezes all over..
Junket-powder/tablets Milk Cream Sugar and Vanilla - devilishly bad for some
people.. but sooooooo goooood! (there are other alternatives listed in the
booklet)

My husband and I have discussed this a bit:
Is Junket one of those "My Mom's / Grandparent's era" things? Why isn't it
a commonplace item these days (ease, convenience, etc)? (or is it?)
I remember mum making it all the time - but I'm now convinced that we were
no normal food eating family.. none of my friends had heard of junket
growing up.. (I'm early 20s for an age/generation pov)
My husband hadn't heard of junket before - but he is quite used to me
picking up odd food things when I see them and acting like they are the best
known thing in the world!

something Australian!)... but she knew what rennet was, and remembered her

I'm a lot older than you (I have kids your age) but I
know about rennet because in my family it was used to
make a fresh, lightly salted cheese. I also remember
seeing flavored Junket on the store shelves, subtitled

I'm even older than Gloria...I grew up with junket, vanilla and
chocolate and [red/pink only] fruit flavors. I used to make it
years ago, but now that we turn all our milk into yogurt I haven't
touched it in years--I still have a few boxes that must be over 20
years old.

In fact, I just saw it on a shelf here in San Antonio. Brought back memories. I
ALMOST bought it. But then I know that things we remember with love as kids can be
ruined if we try to relive them as adults.

flavors to make up the dozen!! e.g. 3 of one flavor, 4 of another, 5 of a third . . .
They charged $21.00 for a case (With UPS Shipping) 2½ years ago.
As far as retail, a local store, Market Basket, carries the Junket Custard,
(Chocolate, Raspberry, Strawberry, and Vanilla), and I think the Rennet Tablets as
well. I've found the ice-cream mix at discount food stores in the area (SE Vermont).
I agree; the Junket ice-cream mix makes a very good ice-cream, even compared to
scratch batches. I thought Junket Custard was "the best" a kid and was delighted to
find it again a few years ago. I usually add a little almond extract to the mix
before it sets to add a little extra to the flavor.

For my ice cream, it's normally a base of heavy cream, half-n-half,
sugar, egg and whatever sweets I happen to be desiring at the time
(bananas, kiwi, strawberries, chocolate, fudge, cookie dough, etc.)

My basic ice cream base is:
2 cups whipping cream
2 cups milk
1/2 cup sugar
2 Tblsp. vanilla extract
2 egg yolks.

Scald the milk and cream together. Beat the egg yolks, sugar and
vanilla together until it become light and fluffy. Add some of the hot
milk mixture to the egg mixture stirring constantly to temper the eggs,
then pour that back into the pot and cook over low hit 3-5 minutes
until it is thick enough to coat the spoon.

Cool the custard and then put it in the fridge overnight. It is even
better to set the container with the custard into an ice water bath to
cool it down even more before putting it into the ice cream maker. It
takes about 20-35 minutes in the machine. Put it into a container
(Tupperware works great) and into the freezer to harden.

To make chocolate ice cream, chop up 5 squares of semisweet baking
chocolate and add to the milk while scalding.

For a really nice vanilla, toss a vanilla bean into the milk while
heating it. Take the vanilla bean out, split it open and scrape out the
seeds and stir them into the custard.

For coffee ice cream, add instant coffee (amount depends on type and
strength of the powder).

You can add chopped fruit or liqueurs like Grand Marnier to the basic
mix, when it is almost frozen.

My mom used to make Junket when I was growing up, but we had it most
often as a pudding rather than ice cream. I think it has a distinct
flavor, and definitely a homemade taste.

I remember my mother making it for dessert, and my (younger) sister
claims she used to often make it and take to people who were sick --
supposed to be healthy and easy on the stomach. The tablets used to be
about the size of an aspirin and come in a little wooden tube. They
are still available, but are larger tablets sealed in foil. Available

"Junket" is a brand of flavored rennet custard (actually made with rennin- the
enzyme; rennet is the stomach lining), there are other brands, and still
readily available... your question is?

The rennet tablets also available in nearly every supermarket around
here. In the UK, I found the liquid rennet more readily available.

I like rennet puddings, but have never used it for making an ice cream
base.

Honey-vanilla rennet pudding is really tasty (the directions are in the
leaflet with the tablets).
