What beans go well with ham hocks? I'm getting tired of the northern beans

Pinto beans are a staple in Latino cooking. http://www.americanbean.org/BeanVarieties/Home.htm Assuming the OP means *smoked* ham hocks... all beans benefit from smoked ham hocks but I think great northern, pea, navy, and similar white beans go best with ham hocks.., not sure what the OP mens by beans with a milder taste, I think white beans have the mildest flavor, certainly much more subdued than limas and kidneys... perhaps by milder the OP means more boring... perhaps what the OP needs is a better selection of bean recipes... and an inclination for more adventurous cooking. In the Brazillian restaurants around here, I see hamhocks in black beans and pinto beans. In New Orleans, hamhocks went in red beans. I think ham hocks traditionally go with every type of bean. I finished my taxes yesterday and am getting a healthy refund. :-) Took me about 90 minutes filing HOH with one dependant, no additional deductions, 5 1099DIV and 2 1099INT forms. The hocks are cooked with the black eyed peas and other ingredients, fished out at the end of cooking, the meat striped from the bone and returned to the pot. I don't have a recipe to hand, googling it would be very easy, there are lots of versions, and IMO a key ingredient is a good BBQ sauce as a last minute flavouring addition. It is often recommended to be served over rice but i like it in a bowl as soup. -- JL |

I know I have it somewhere..... It's the version from the original Fannie Farmer book. Just hope I didn't leave this particular version at home in my other box of recipes. A sort of general term for legumes that produce edible seeds in pods is "pulse". Black-eyed peas are in a genus with other Old World legumes like mung beans, and not in with true peas.
