What beans go well with ham hocks? I'm getting tired of the northern beans
I normally use. I'd like something with a little different milder taste for

A true Suth'ner would say pintos....but as far as dry beans go, try butter
beans (dried LARGE limas), cranberry beans, kidney beans, and meaty hocks
cooked with lentils and a few odd veggies make one heck of a soup.

I agree whole-heartedly about the large buttery, limas. They are great
with ham hocks. Turns the dish into this wonderful creamy delight.

I don't know of a single bean that doesn't go with ham hocks, except
maybe lima, but I'm NOT a fan of lima beans! <G>

You could try a package of 7 bean mix, or pinto beans, or lentils or
whatever.

Black beans are especially delicious. ;-d

Navy are my favorite. They're like northern but smaller, with the most
wonderful
mild flavor that picks up the ham flavor. With celery and carrots of course.
And
some fresh baked date-nut, pumpkin, or banana bread.

Pinto beans are a staple in Latino cooking.

Assuming the OP means *smoked* ham hocks... all beans benefit from
smoked ham hocks but I think great northern, pea, navy, and similar
white beans go best with ham hocks.., not sure what the OP mens by
beans with a milder taste, I think white beans have the mildest
flavor, certainly much more subdued than limas and kidneys... perhaps
by milder the OP means more boring... perhaps what the OP needs is a
better selection of bean recipes... and an inclination for more
adventurous cooking.

In the Brazillian restaurants around here, I see hamhocks in black beans
and pinto beans. In New Orleans, hamhocks went in red beans. I think
ham hocks traditionally go with every type of bean. Regional
differences account for what sort of bean is used. (Pigion peas in
Jamaica. Black beans in Cuba with red onions and sour cream. Lima
beans in Georgia.)

All true. But I find the delicate flavor of navy beans preferable to all of
the
above, with ham hocks or just nice bits of fried ham. I like using fresh
hot Italian sausage with other beans--and no meat at all with black beans
just tons of garlic and cumin.

they were my favorite.

I've been using
http://www.OLT.com now for 5 years (an IRS approved
filing site) and have yet to look back. I finished my taxes yesterday
and am getting a healthy refund. :-)

Took me about 90 minutes filing HOH with one dependant, no additional
deductions, 5 1099DIV and 2 1099INT forms.

I'll clu' ya they are cheaper than Turbotax or a CPA!

We'll finally get dad's truck brakes done. The rest goes into savings.

You always get to the 16th when the 15th falls on a Sunday but this year the
16th is a holiday in D.C. so the whole rest of the country got an extra day
too.

I just file using the IRS's web site. Our taxes are complicated due to
real estate, self employment, royalties and interest, and other stuff.

Ever hear of Hoppin' John, while not technically a "bean" black eyed
peas are its primary ingredient an go very well with ham hocks.

The hocks are cooked with the black eyed peas and other ingredients,
fished out at the end of cooking, the meat striped from the bone and
returned to the pot.

I don't have a recipe to hand, googling it would be very easy, there are
lots of versions, and IMO a key ingredient is a good BBQ sauce as a last
minute flavouring addition.

It is often recommended to be served over rice but i like it in a bowl
as soup.

I make mine every New Year's Day with bacon and onion, and cook
it down until it is pretty thick and serve it over rice. Good stuff, esp.
with collards and corn bread.

This must be bean soup with ham week..

I am getting ready to make Senate Bean soup, if I can find the recipe
that my mother used. I know I have it somewhere..... It's the version
from the original Fannie Farmer book. Just hope I didn't leave this
particular version at home in my other box of recipes.

I am using the ham bone and a fair amount of the ham, from the ham I
got last week.

Not California. The due date for the state tax is the 16th,
and the state tax form uses information from your federal
tax form, so you have to complete the federal form first.

This might be one of those "is a tomato a fruit or a vegetable"
questions, but is there a difference between peas and beans? I would

They are all related, of course. Whether a particular one is called a
pea or bean seems pretty arbitrary. A sort of general term for legumes
that produce edible seeds in pods is "pulse".

Black-eyed peas are in a genus with other Old World legumes like mung
beans, and not in with true peas.

The ultimate sneaky comfort food when I am really tired and still cannot
sleep: a bowl of black eyed peas with a little cheddar sprinkled on top.
Gives me a carb buzz that puts me right to sleep. Even Bush's canned
will do. And I am sure it is just excellent for my waistline to eat this
starchy treat right before bed. <g> I don't do it very often.

Oh cool!

I was unaware of that.

I finished mine yesterday afternoon on line and e-filed. I got the
notice back this morning that they have been accepted.

I love that website, but my tax forms are relatively simple. I don't
itemize and all I have are some 1099DIV's and INT's.

Increase the deductions on your W-4.
I use the annual tax return as sort of a mandatory savings account.

I got my central heating and air conditioning system replaced totally
one year using my tax return. :-)
