Mmmm--strudel and coffeecake in one--double the pleasure, double the fun!
(And calories, too?)

BTW, someone from tai chi gave me a recipe for pseudo-Clodhoppers (the
graham cracker chocolates I brought). Not that it's a difficult recipe to
figure out, but I could post it if you're interested. Or I could just send
you some of the originals (or the, imo, better version with peanuts and
better quality white chocolate) :-).

T'anks. Many years ago I had the opportunity to be included in a
cookbook -- and I turned it down, thinking I should somehow be paid for
my contribution. Pffttt. The book became quite popular and I've kicked
myself ever since for passing up THAT opportunity for fame and glory.
When Ann asked me for my recipe for Crea-- Ooop! -- I didn't hesitate
for a 'nanasecond. :-) I got a free book out of it and loads of
giggles reading this thread.

Darlin' I just ordered six copies from amazon.com this morning. I
brought the book to the monthly coffee session and 3 friends ordered; I
ordered three more for meself I figure I'll offload somehow. You can
prolly do likewise.

I've been reclining in the sack with the book for much of the afternoon.
OK, so I slept for two hours. Minor point. I'm enjoying it. Ann's
writing style is casual and friendly and I gotta tell ya that reading
about the Braham Pie Day festival--well, I felt like I was there. Sure
made me WANT to go there! I've found only one minor error thus far.
Conspicuous in its absence, howsomever, is anything about the Gedney
company, other than a brief mention about it in conjunction with State
Fair Judge Jan Stroom. There's a bit about Land O'Lakes, the Pillsbury
Bake-Off, Betty Crocker, Hormel's SPAM, Schwan's -- and naught about a
family owned and operated company that's been making pickles hereabouts
for 122 years. She asked for my opinion about the book. . . . I still
love it, in spite of nuthin' about ol' Matthias and his progeny.

Here's a recipe for a nice coffee cake.

Apple-Cream Cheese Coffee Cakes

Categories: Coffee Cakes, Treats, etc.

Amount Measure Ingredient Preparation Method
3 1/2 to 4 cups Robin Hood All-Purpose Flour
1/3 cup sugar
1 tsp. salt
1 pkg. active dry yeast
1/3 cup shortening
1/2 cup water
1/2 cup milk
1 egg
Cream Cheese Filling:
8 oz. cream cheese softened
1/4 cup sugar
3 Tbsp. all-purpose flour
1 egg yolk
1 can apple pie filling (20 oz.)
Topping:
1 egg white
1/2 cup sliced almonds
1/4 cup sugar

Mix 2 cups of the flour, 1/3 cup sugar, the salt and yeast in a large
bowl. Heat shortening, water, and milk to 125-130? (shortening may not
be melted) Stir into flour mixture. Mix in egg; beat on medium speed
of electric mixer until smooth, about 2 minutes. Stir in enough of the
remaining flour to make dough easy to handle. Turn dough onto lightly
floured surface; knead until smooth, 3-5 minutes. Cover and let rest 10
minutes.

Beat cream cheese filling ingredients until smooth.

Divide dough into halves; roll each half into a 15-inch circle. Fold
into fourths; place in 2 greased round pans, 9x1-1/2 inches, or two
9-inch round pans with removable bottoms. (Point of dough should be in
center of pan.) Unfold; press dough against side, allowing edge to hang
over edge of pan. Spread half of the Cream Cheese Filling over dough in
each pan; top each with half of the pie filling. Make cuts at 1-inch
intervals to about 1/2 inch above filling around outside edge of dough.
Twist strips and fold over filling.

Beat egg white with hand beater until foamy; brush over dough. Sprinkle
each with 1/4 cup almonds and 2 tablespoons sugar. (At this point, you
can cover and refrigerated coffee cakes up to 24 hours; rising time may
be slightly longer.) Cover and let rise 45 minutes.

Bake in 375? oven until golden brown, 30-35 minutes. If coffee cakes
brown too quickly, cover loosely with aluminum foil. Cool 20 minutes
before cutting. Makes 2 coffee cakes.

Cranberry-Cream Cheese Coffee Cakes

Prepare as above except mix 1 can (16 ounces) whole berry cranberry
sauce and 2 teaspoons grated lemon peel or 1 tsp. almond extract;
substitute for apple pie filling.

Peach-Cream Cheese Coffee Cakes
Prepare as above except substitute 21-ounce can peach pie filling for
the apple pie filling.

Okay, I just placed my first Amazon order--no longer
an Amazon virgin, and it's all your fault. This
book better be good or I'm putting the no-jell
