Nope. No jars involved. Just flour, butter, milk, eggs, butter, cream
cheese, sugar, butter -- that kind of stuff. Y'all think I'm so nice.
I'm not and I've been trying to tell people that for years. I'm in
Ann's book. Twice. Just one recipe, though, plus another remark. I
let her publish the one recipe I don't generally share. I can count on
two hands the number of folks I've shared it with. Screw Minnesota Nice.

Not especially high billing, but I'm in mighty fine company. Buy the
book. It's got a lot of good recipes in it -- at least they sound
mighty good to me. And Ann is a Home Economist by education (she tested
every recipe) and a very decent writer. She's been working on the book
for a couple years.

My recipe in there is awesome -- and after you buy it and before you
make it, I'll tell you exactly why! Check Amazon. That's as cheap as I
see it; it's only just out. Why is it my recipes always seem to end
up in the back of the book? ? "-)

This looks to be a good one. I have it next to me here and it's got
lots of interesting stuff in it beyond the recipes. remember that it is
published by the Minnesota Historical Society. Did you know that the
Watkins company (all those flavorings and salves) started in Winona,
Minnesota? There's info about the Pillsbury Bake-offs, the State Fair
(hint, hint), and other Minnesota Stuff, including SPAM. Don't be
expecting any goor-met type recipes, though. No Tuna Hotdish, either.

The method part of the recipes is printed in black on an orange
background and the recipe title is printed in light orange on the same
orange background. A little difficult to read, but not impossible.
Ingredient list is printed alongside, black on white.

What, you didn't hear me the first time? "-)
The format of the book isn't like a more standard cookbook thang -- not
grouped by category like Appetizers, Salads, Soups, etc. There is a lot
of narrative. Perhaps you'll get a better idea of Minnesota because of
it. Or perhaps not. :-)

You do not know how mean. I went (ran) to the Upper West Side Barnes &
Noble to look at the book. They have not gotten it in, as yet!!!!

That's after she assured us that Barnes & Noble has it.

To console myself, I went to Zabar's which is only two blocks away.
Looking for the book cost me over $50.00

Fake Strudel Coffeecake

Amount Measure Ingredient Preparation Method
Crust:
2 cups flour
1 cup margarine or butter
1 cup sour cream
Filling:
2 cups finely chopped peeled apples (use tart ones)
1 cup vanilla wafer crumbs (about 25 cookies crushed)
1 cup sugar
1 cup chopped walnuts
1 tsp. cinnamon
1/4 cup melted margarine or butter

Make dough for crust: Cut cold butter or margarine into flour as you
would for pie crust; thoroughly mix in sour cream. Chill several hours
or overnight.

Make filling: Combine all ingredients and mix thoroughly.

Assemble: Roll half the dough on a well-floured surface to about
10x14². Spread half the filling lengthwise down the center of the dough
to about an inch from ends. Fold short ends of dough over filling
first, then sides -- there should be some overlap. Flip filled strudel
over onto a baking sheet so seam will be on bottom.

Repeat with remaining dough and filling -- two strudels will fit on one
cookie sheet. Then, cut about 4-5 slits in dough and sprinkle
generously with a mixture of cinnamon and sugar.

Bake at 325° for about 35 minutes, until nicely browned.

Notes: I do it in the food processor: Cut butter into flour, dump in
sour cream and mix just until a ball forms. I do all the chopping for
the filling in the food processor, but combine things by hand. Also, I
might only use 3/4 cup sugar for the filling. And I substituted about
1/4 cup dry bread crumbs for that measure of vanilla wafer crumbs -- not
so sweet. Baking time can be tricky. I use insulated baking sheets
and need almost another 10 minutes -- and then sometimes I still think
the bottom crust looks awfully doughy--there gets to be about 4
thicknesses of it at the ends! Use your imagination and watch it.
