I hadn't made this in quite a while (since before I moved here) and love
it...and had chicken in the fridge. Normally I like it on Hawaiian bread (the stuff in the orange package at the supermarket...forget the brand) but am just having it on regular wheat bread today. I don't have exact measurements, I just taste and look at it to see if it's right. Chicken, grapes, apples, walnuts, celery, mayo, hot madras curry powder and a few drops of honey are the ingredients. -- "I'm thinking that if this dilemma grows any more horns, I'm going to shoot it and put it up on the wall." - Harry Dresden |

I would use apples or (halved) grapes, not both (soaked raisins are good too). With the fruit, I don't think a sweetener is needed. Diced scallion or sweet onion is nice. As you probably know, it is better if it sits for a few hours. -- Peter Aitken |

My salad is similar but I use pineapple instead of apple and toasted almonds in place of walnuts. It's a summer staple for us, not usually served as a sandwich. gloria p |

What do you use for dressing? I like simple Hellmanns mayonnaise mixed with Penzey's sweet curry powder. |
