I bought some smoked salmon at the Fish House (or something like that)
in Two Harbors last week. It was pretty good, Kiddo, but yours was
about 4 times better! You do good work. Ahem.

If you don't mind me asking... how do you ship and what type of packing?
I have some smoked salmon I'd like to send to my mom in Las Vegas but am
not sure the best way to pack and ship.

I don't know how Bob does it (and we live in the same city, so I hope I
can pick it up from him), but I once received a package of smoked salmon
that was FedEx'd overnight, with some freezer packs keeping it cool.
Barely. Paul Hinrichs (r.f.preserving friend who doesn't post any more)
knew what he was doing with his smoker! Yowsers!
