Default Seafood casserole recipe

I think someone was looking for a seafood recipe not long ago.
Here's one I found in the food section of the paper. It looks pretty
darned good.

Sharks Bread (Pan de Cazon)

tomato sauce
4 cups diced canned tomatoes; including liquid
1 cup diced red onion
2 tablespoons minced serrano chile; or more
2 cloves garlic; minced
1/4 cup orange juice
1 tablespoon olive oil
1 tablespoon Tomato paste
1 teaspoon ground coriander seed
1/8 teaspoon ground cinnamon
Salt and pepper to taste
CASSEROLE
3 cups black beans, cooked; or canned
8-10 corn tortillas cut into; 2 inch pieces
2 pounds shark steak or other firm; white fish
cut into 3/4 inch cubes
1/2 cup fresh cilantro leaves
8 lime wedges

Place the tomato sauce ingredients in a large saucepan and simmer at
low heat for 20 minutes, covered.
Preheat oven to 350°F. Place the beans in a bowl. Puree or mash 1 cup
of the beans and stir back into the remaining beans. Season the beans
with salt and pepper.
Cover the bottom of a 9 X 13 inch baking dish with one-third of the
tomato sauce. Layer half of the tortillas over the sauce. Cover the
tortillas with the black beans. Scatter the shark cubes over the bean
layer, pressing the meat into the beans. Spread another third of the
tomato sauce over the fish and beans. Place the remaining tortilla
pieces over the sauce. Cover the final tortilla layer with the
remaining tomato sauce.
Bake for 45 minutes. Let stand 15 minutes before serving. Sprinkle
with the cilantro and serve with lime wedges.
