I love them. I get mine raw and fresh from the local market,
microwave them on high for 1 minute and then medium for 3 to 4 minutes, tossing them frequently (to prevent burning and to achieve a golden hue). No need to add salt or oil. This way you can taste the fragrance of the cashew nuts. And think about the extra fats and salt you have eliminated. You can do the same for Almond nuts, Pumkim seeds, Sunflower seeds. I've been to a cashew plantation in Belize. The nuts are roasted over very hot fires within seconds of harvest. The smoke is highly toxic so it is very important to be upwind and wear protective clothing. Harvesting cashews is indeed a hellish job, why cashews are so expensive. The toxin is urushiol, the same thing as in poison ivy. It is in the shell, but not the nut. Normally during shelling, the nut is contaminated, so it must be cooked. There are vendors selling cashews that they claim are truly raw, shelled in a way that doesn't contaminate the nut with urushiol. I don't know if this is true or not. I grew it from seed (a raw cashew nut in the shell). It came from my father's cashew tree in Miami. I have eaten the fruit off my father's tree and it has a very nice flavor. Rather than eating it, you are really just chewing on the fruit to get the juice out, then you spit the pulp out. I guess you could juice them, but there were never enough off that one tree to bother. Here is a picture of my tree, which is now 2-1/2 years old. The tree is about 18 inches tall now: http://i9.tinypic.com/525vnnb.jpg My cashew tree will never bear fruit and can never be planted outside, since it is a tropical tree. I'm not sure how big it will get, but obviously no taller than my eight foot ceilings. There's not a whole lot of gardening advice on growing cashew trees indoors as a houseplant. My father grew a lot of different tropical trees besides cashew, including sugar apple, mango and sapodilla. He also grew bananas and several kinds of citrus including orange, grapefruit, lemon and lime. Sapodilla is one of the more interesting ones. It has a very unusual fruit that roughly looks like a russet potato. The fruit has a very different taste and texture. Sapodilla trees are also the source of chicle, which was used in chewing gum... Couple of friends of mine have been working on cashew production (growing the things) over the past several years. They bring some raw kernels in for smoko in season. They (the kernels) are not bad to eat raw, but I prefer them roasted and salted! :-) The raw kernels are fairly white, but they can get brownish stains from the oil from the shells due to the low tech shelling procedure used by these blokes. So one has to be a bit selective when sampling the things -- you really don't want to eat any of those stained portions! One way of handling the things on the domestic scene is to freeze them before shelling. If you don't try to do too many in one batch this works okay -- the corrosive oil remains safely frozen in the shells for awhile, but not for long! My personal recommendation would be to buy the commercially processed raw kernels rather than stuff around half the day to glean a few dollars worth yourself!
