Made too much Tabbouleh. Hate to throw it out, neighbors don't want
any. Can it be frozen?? |

I believe the quality would suffer too much if you put it in the freezer. I'm assuming you made it with fresh herbs, tomato etc? What I would do is try to incorporate it into as many meals as possible over the next few days, and chalk it up to a learning experience if you do have to toss any out. I'd get as creative as possible. I buy organic foods, and absolutely hate wasting any because of the cost. If it were me, I'd put some in an omelette for a different breakfast, add some strips of chicken or steak to it for a quick lunch, have it as a side dish for dinner, or try to turn it into a dinner salad base, and add some meat or more veggies to it. I have a vacuum sealer, and what I might also do is try to seal it on the delicate setting, to get as much air out as possible, without crushing the veggies. Then it might keep a few more days. I'm visiting George Shirley, an occasional poster to r.f.c. and a dear friend from r.f.preserving, in SW Louisiana -- he prepared moussaka, tabbouleh, and hummous for dinner last night. When he piled it into the serving dish, he put it atop a base of romaine lettuce leaves. There was a good cup and a half left over and he said he was going to freeze it. I'll have to ask him if he'd ever frozen it before; I told him I couldn't see how freezing it would be a good thing to do. Anyway, he remarked that the liquid in the serving bowl went beneath the lettuce leaves, thus preventing the tabbouleh from becoming especially soggy. Must've been true because what we had for lunch today was every bit as good as last night's original serving. -Barb |
