Default Speaking of Chocolate...

I thought you all might enjoy this. It's a recipe for Chocolate Silk
Pie. I use Ghiradelli Semisweet Chocolate chips, and it's just
soooooooo amazing! Every time I have a dinner party, my friends ask
for this. The recipe says to serve it chilled, but it's also really
good right out of the oven - yes, one time I couldn't wait for it to
chill, and just dug in :-). But when you eat it hot, it's better with
vanilla ice cream rather than whipped cream.

CHOCOLATE SILK PIE
1 unbaked single graham cracker pie crust
1 cup semisweet chocolate chips
1/2 cup (1stick) butter
1 cup sugar
pinch of salt
1 tbsp unsweetened cocoa powder
3 eggs
2/3 cup evaporated milk
1 tsp vanilla
Preheat oven to 350 degrees.
In large, microwave-safe bowl, melt chocolate chips and butter at 50%
power for 2 1/2 minutes until butter is melted; stir until smooth,
Whisk in salt, sugar, cocoa powder, eggs, evaporated milk and vanilla
extract, whisk until well blended. Pour chocolate mixture into crust.
Bake 30 minutes or until filling has puffed, but center still slightly
wiggles. Cool completely. Refrigerate until ready to serve.
Garnish with whipped cream and chocolate shavings, if desired.

Yes, I agree - coffee is awesome with chocolate, but people never
think about tea going well with chocolate. There is a tea called
Golden Monkey that is simply amazing with chocolate. It's also great
with a night time dessert b/c it has half the caffeine of coffee.

I am fond of Earl Grey tea with chocolate. In fact, I once had some
Dolphin brand dark chocolate with earl grey leaves in it. It was
astoundingly good!

Assam black tea is also really good with chocolate. I've never really
been a fan of Earl Grey - not sure what it is, I just can't get into
it. So many people love it though.

It's far more dense than a mousse, and only slightly more dense than
cheesecake. It's like a cross between cheesecake and a semi soft
fudge. Hope that's remotely descriptive :-).
