Default Hard cooked eggs

I buy fresh eggs from the farm. So fresh they don't peel when hard
cooked. Had to buy some from the store to get old enough eggs that peel
when I hard cook them! 8-0

under the shell and makes it easier to remove the shell.

Julia Child used to recommend poking a little hole in the wide end,
which she said will let gas escape as you boil the eggs. This makes
the eggs eaiser to peel, apparently.

It just steams eggs...I have a kenmore electric veggie steamer (sears
approx $40 IIRC) that comes with a rice basket, a 2 stackable baskets and
a 10 egg tray. Does more than just eggs can steam veggies,fish, shrimp,
rice... whatever you want steamed. But it doesn't poke a hole in the
shell. It does have a timer. I never tried to poach a egg in it, don't
believe you could.

I find that steaming eggs for about 20 minutes allows for easier shell
removal for hard boiled eggs. I think somebody else tried it out with one
of those bamboo wok steamer dealies with good sucess as well. I've posted
about this before.

No..you stir them until the water comes to a slow boil. Take off
heat and let set 12 minutes. Immediately immerse in cold water to
stop cooking. Prevents green shadow around yolks.

That is normal.

One way to make fresh eggs peel-able is to leave the carton out at room
temp for 3 or 4 days. They age a bit faster that way.

Steaming fresh eggs also worked for me rather than boiling them.

I used to have my own chooks.

That kind of pre - done stuff is a huge money maker for the stores...it's no
wonder they push it.

Memorial Day I made cole slaw for a coupla cookouts, I think the whole
amount I spent was less than four bux for the huge amount I made (four heads
of cabbage, two bags of carrots, red bell peppers, scallions, dressing
ingredients). Some young gal commented, "Wow, this is good, where'd you buy
it?". When I explained that I actually *made* it she expressed amazement
that someone would actually get out the food processor to chop the
ingredients and not buy a bottled coleslaw dressing...to listen to her you'd
think it was pioneer days or something. I'm like "Hey, I didn't *grow* the
cabbage and stuff...", lol...

I'll check next time I go, they advertised these last time they had an egg
sale...I was like, "Huh!?".

My store has a lot of that _Sex and the City_ demographic, it's targeted to
them I'm sure..peeling eggs is something they'd consider "icky"...

[This is the same demo that is constantly whining that they are broke, turns
out they are ordering carry - out every night or getting pre - cooked
entrees at the deli, carry - out salad bar at four bux/pound, a heavy
Starbuck's habit, etc. Don't they teach Home Ec any more...??? What they
spend on prepared foods in two or less days I could budget for a whole week,
and eat very well too...]

Me, I'll pay 99 cents for a dozen at Walgreen's or wherever and peel my
own...

I buy a lot more eggs in the summer, they are used almost exclusively for
tater salad...I can peel a dozen eggs in nothin' flat...!!!

My uncle had chickens. He taught me that they had to be a few days old
before you could peel them hard-boiled. Fresher is not always better.

got from the henhouse. If you make potato salad or deviled eggs even
semi-frequently, you will bless this purchase. I have two - the first
one still works great - and I got it in 1962. LOL.

Got tired of waiting so I did use Google Products. By heaven, in
addition to not very expensive products from Oster, Krups and
Cusinart, there's even a microwave egg cooker!

My original one is a Sunbeam, which apparently is now Oster (in terms
of small appliances). That one hard-cooks 8 eggs; some of the newer
ones only do 7 at a time. It also has a Teflon-coated insert that
will steam-poach 4 at once.

Well, in terms of one or two uses, maybe. However, I've been using
mine for decades, which makes it pretty damn useful AND economical.

I usually roll them on the counter so they crack a little,then sit them
in water awhile till cool..the shell comes right off
