I believe I saw this dish on 'The Best Of' (food network).
To me, it looked like chunks of fish meat that were steamed and then cut into odd shapes and stacked to look like 'parts of a dragon'.Then it was covered with a red sauce. It looked like a hot-pepper sauce. But it might actually be more like this 'Sweet & Sour Dragon Fish' recipe on the Asian Chefs Assoc. website. The fish in this recipe is filleted, sliced, battered and twice-fried, and then reassembled and covered with a red sweet sour sauce. http://www.acasf.com/sweet-sour-dragon-fish/ W.
