Peach Cucumber Salsa



Pulse in a food chopper until very fine:
juice of 1 lime
1 inch piece of peeled chopped ginger root
1 small chipotle pepper in adobo sauce


Finely chop:
5 small, ripe, peeled peaches
1 small unpeeled cucumber (as in young with undeveloped seeds)
1/2 of a small onion
1/4 of a red bell pepper

Combine all and stir in:

1/4 t curry powder
1/4 t coarsely ground black pepper

Serve with blue corn chips.
