I have to admit that I was disappointed in a boneless shoulder of lamb I cooked last night. The outer areas were IMO overdone and the inner part was raw, and there was a huge wad of fat in there that should have been removed rather than folded up and hidden and sold for the same price as the real meat. |

Incidentally, that's why mint sauce is served with it, to offset any gamey taste. (That's real mint sauce, with minced leaves, vinegar and sugar). By the time it becomes mutton, it's strong, greasy-flavoured and yucky. Dora |
