I saw this a 99 cents store and so bought it for the first time in my
life with no clue how to cook.

Any easy and healthy recipe?

If you're talking about FRESH eggplant, slice it about an inch thick, brush
both sides with olive oil, sprinkle with some pepper, and grill it. Don't
ask how long. It depends on how fresh they are. Try different lengths of
time and see what texture you like best.

make 1/2 inch slices and dip in beaten egg yolk and then in seasoned
flour or bread crumbs and quickly saute till tender and golden in a
little hot oil.


Also, you can saute them just enough to set the egg yolk then place in a
pan sprinkle with some grated parmesan and bake in a hot oven for 10 -
15 minutes.

Eggplant is the main ingredient of ratatouille. And that's essentially
a mix of sauteed vegetables. If you find rat in it, it's gone wrong.
