Remember me? It's two dollars a day guy.
Here's the first delicious soup I've made in my adventure. 12oz dried red beans, soaked 1/2 head of nappa cabbage, shredded 1 28oz can diced tomatoes 1 medium onion, chopped 2 celery stalks, chopped 1-2 carrots, chopped 3 strips of bacon, diced 56oz water Fry the bacon in the bottom of a six quart pan. Remove, but leave the fat. Sauté the onions, celery, and carrots in the bacon fat. Add the cabbage, tomatoes, beans, and water. Bring to a boil, cover and let simmer until beans are tender. Add the bacon bits back in. Initially, this was a little bland, but I added some fresh thyme and rosemary, and threw in a few cloves of minced garlic. This cost me about $2.50 for about five quarts of soup. I would have preferred to use chicken stock over water, but have not yet got any chicken to make stock. b. misanthropia.com |

I remember going through a period of time when I didn't have much money. I ate boiled eggs or oatmeal for breakfast. Lunch was spaghetti with tomato sauce and a small amount of cheese for protein. I made it from scratch. Huge batch and portioned it out to take to work with me. I didn't own a microwave in those days but we had one at work so I could reheat it there. Dinner was a peanut butter sandwich and canned peas. Had plain, air popped popcorn for snacks. Fresh apples and carrots rounded out my meals, when I had a little extra money left to buy them. I usually got a meal at my parent's house a time or two a month. Once a week, I had dinner at Sizzler and had the "all you could eat" salad bar. I really took advantage of it too, stuffing myself full of all kinds of vegetables. Back then I didn't worry about whether or not my food was organic and didn't know of my food allergies. Ah... Those were the days! |

I don't see what the point is of removing the bacon bits. I'd leave them in throughout to flavor the beans. In contrast, I would have held out the Napa until a few minutes before the end so that it would not have cooked to death and invisibility. I bought a couple of whole chickens today for 69 cents/lb. Several meals and some stock for little money. --aem |
