Default Picnic ideas???

I have some friends coming to visit for a few days next week, from
Florida. While they are here, we plan on making a day trip from my
home, to Yosemite. I want to pack a picnic, but am bored with the
usual sandwich ideas for the lunch.

Does anyone have any fresh ideas?

Addendum:
A flat fry bread sliced in half would be nice per person. Make a slaw,
mayo based and make sure you have lemon, salt and pepper when you
picnic. Use the slaw sparingly on the sandwiches at the picnic area and
ask if your guests want it before making a decision for them. Cook
everything that needs to be cooked first at home and assemble in God's
Country. I've never tried any of this, but what's not to like.
I'd eat one now if I had any trout.

We did Yosemite about a month ago and walked the redwood trail. Beautiful
and the weather was amazing. The falls were already slowing down when we
were there which was a little early. Now for the picnic....

fruit and cheese
nice bottle of wine
hummus and flat bread
Thinly sliced roasted chicken breast
black and green olives
marinated mushrooms

Damn now I am hungry

I think I'm going to go with your idea Cindi. It sounds great. I
must admit the trout idea sounds good too, but I'm a little fearful of

Rice noodles with scallions and stir-fried beef strips, dressed with sesame
oil and sherry vinegar

Rotini with pitted kalamata olives, cucumber slices, red onion slices, and
tomato chunks, dressed with buttermilk, dill, garlic, and mint. You can open
some tuna to mix in at the last minute. Or you can crumble in some feta
cheese.

Cous cous with pine nuts, raisins, tofu fried with cumin, and black olives

Bow-tie pasta with broccoli, cashews, and chicken, dressed with lemon juice,
chile oil, and garlic


There's more in _Cooksmart_, but I don't have that book with me at the

All that... she said a *picnic* at Yosemite for a few friends, not a
wedding at Leonards of Greatneck. It'll require a crew of illegal
aliens a week slaving away to prepare all that... and odds are most
will go uneaten. I really don't think typing an entire cookbook was
what was asked for.

For a picnic I'd pack labor-free picnic food... a couple-three coolers
rotisseried chickens and some potato/mac/slaw salads from the local
deli, an assortment of cheeses and hard sausages, assorted fresh
fruit, a watermelon, soft drinks (I don't think alchohol is permitted
in Natl. Parks), assorted chips and pretzels, and a cooler filled with
extra ice.... it gets hottern' hell at Yosemite this time of year.
And there's plenty work normally hosting guests, it's not fair that
the host/esses bust their butts 24/7, certainly not to cater a picnic,
they're supposed to have a good time too. Sounds like you're a greedy
guest, I bet no one invites you for seconds.

A big thermos of icy gazpacho, good baguette bread, a large hunk of
fairly mild cheese, and a chilled bottle of white wine. Fruit for
dessert, or if you must, a n elegant box of chocolates.

I think those were individual "menus". Still way too much work for a few
visiting friends for whom she wants to pack a simple picnic, IMHO.

I'm not really a sandwich fan per se. For a picnic, I like to grab some things I
don't normally get very often. Sometimes I will get some proscuitto, genoa,
soprasotta, and the like, a few good cheeses and a baguette. I really like a thin
slice of baguette with some herbed goat cheese and a bit of proscuitto. Thinly slice
some cukes and roma tomatoes to go with.

Then again, you can go a whole other directions and make a huge salad with a bit of
everything. Just don't add the dressing until you're ready to eat! You could go with
a pasta salad, or a salad of greens with whatever you like...say, a chef's salad or
antipasti salad.

Or, you if you want to prepare the day before, you could make a lemon chicken, then
slice it up and serve it with tatziki and hummus and some pita wedges and a Greek
salad.

You'd have to get crackin' pretty soon, but this is a very easy recipe
that needs to cure over a period of a few days. It "reads" long, but
it is really simple. It is very tasty, very pretty and does well when
served with dense crackers:

Tequila And Lime Cured Gravlax

appetizers, fish and seafood

For the dry cu
1 1/2 pounds side of salmon (sushi grade); unsliced, skin on
1 1/2 cups kosher salt
3 cups light brown sugar
For the liquid cu
1/2 cup tequila
1/2 cup fresh lime juice
zest of 1 lemon; colored part of peel
; only
zest of 1 orange; colored part of peel
; only
2 teaspoons whole coriander seeds
3 sprigs fresh dill; with stems
3 sprigs fresh mint; with stems
3 sprigs fresh basil; with stems

Day One - The Dry Cu Mix the salt and sugar together and reserve
1/3 of it for Day Two. Next to the salmon, place a plastic-wrapped
jelly roll pan and, forming a bed 1/4" thick along the length and
width of the salmon, spread the cure. Turn the salmon over and lay it
fresh side down on the cure. Scatter leftover cure along the sides and
ends of the fish, and then pull the plastic up so it wraps around the
fish securely and will capture extruding juices. Place a board or
another pan on the fish and set 5 pounds of cans or other heavy
objects on the board to weigh down the salmon. Refrigerate for 24
hours.

Day Two - The Liquid Cu Pour the tequila and the lime juice into a
bowl and stir in the zests. Place the coriander seeds in a plastic
bag, lay it on your work surface, and crush the seeds with a rolling
pin or the bottom of a heavy pan; pour them into the bowl, then chop
the herbs roughly and stir them in. Pour the tequila marinade into a
second plastic-lined jelly roll pan, spreading the zests and herbs out
so they are evenly distributed on what will be the length and width of
the fish. Sprinkle the reserved dry cure over the liquid, again
reserving a bit for the ends and sides. Remove the salmon from the
refrigerator and lay it flesh side down on top of the cure, scattering
the dry ingredients along the sides and ends of the fish. Wrap the
plastic around it, replace the board and weights, and refrigerate
for at least another two days and up to four.

Slice the salmon into thin, long, wide, handsome pieces, using smooth,
long strokes with your very sharp, long knife, and that you leave the
skin on the cutting board. Cut only as much as you plan to eat. Store
the salmon in its cure, but it need not be kept weighted down. Cured
salmon will keep for at least 10 days in the refrigerator.

I realized from this thread that my idea of a real picnic involves a
bbq. What I've read so far is just a genteel luncheon outside.

SoCal to Washington, D.C. when my daughter had her graduate school

Well folks, I must admit I cheated a bit on the picnic lunch. I ended
up making a Roasted Corn and Pepper Salad, and packing some fresh
pineapple chunks. But best of all, were the sandwiches, which I ended
up getting at the BelAir Deli here in Sacramento. They were
absolutely better than anything, I've ever made myself. They were
sliced Roast Beef, Horseradish Cheese, Mayo, Fresh Basil Leaves,
Sliced Tomato, and Red Onion, on Chibata Rolls. Something we could
make on our own, but it was so wonderful to just pick up, and take!

As an aside, this is the very first time, I ever witnessed Yosemite
Falls being completely dry. . .It was as if someone had turned off the
spicket at the top! That's how dry it is here in California right
now!
