I had some leftovers from yesterday's lunch out.
I had Carnitas, rice, beans and tortillas http://i13.tinypic.com/4pdhwk7.jpg Not enough for two to have nice lunch so I decided to make a little go a long way and make some omelets. I was going to make a side dish of chilequilles but I didn't have any enchilada sauce that I_always_have on hand. :-( Looks like I'll be making some today. I started some red potatoes and onions cooking. Once they reach this stage I add some water and scrape up all the nice fond and simmer covered to finish. They are nice and creamy and potato-y http://i16.tinypic.com/6d1b2mp.jpg While those were simmering I sliced up a couple of peaches and put them under the broiler. I didn't put anything on them, those bubbles are the natural juices from the peaches. http://i15.tinypic.com/6269rbo.jpg The leftover carnitas were chopped up and heated up in the microwave along with the rice and beans. I sautéd some spring onion also. Once the eggs were ready I put the filling down the middle and grated some queso seco on top. http://i13.tinypic.com/52zq3qh.jpg I forgot to add the onion to the filling so it ended up on top. It added a nice touch after all. Plated with the broiled peaches and potatoes. http://i11.tinypic.com/4y50f1u.jpg It turned out pretty darned good.
