Default Leftovers omelet

I had some leftovers from yesterday's lunch out.

I had Carnitas, rice, beans and tortillas

Not enough for two to have nice lunch so I decided to make a little go
a long way and make some omelets.
I was going to make a side dish of chilequilles but I didn't have any
enchilada sauce that I_always_have on hand. :-(

Looks like I'll be making some today.

I started some red potatoes and onions cooking. Once they reach this
stage I add some water and scrape up all the nice fond and simmer
covered to finish. They are nice and creamy and potato-y

While those were simmering I sliced up a couple of peaches and put
them under the broiler. I didn't put anything on them, those bubbles
are the natural juices from the peaches.

The leftover carnitas were chopped up and heated up in the microwave
along with the rice and beans. I sautéd some spring onion also.
Once the eggs were ready I put the filling down the middle and grated
some queso seco on top.

I forgot to add the onion to the filling so it ended up on top. It
added a nice touch after all.
Plated with the broiled peaches and potatoes.

It turned out pretty darned good.

Grilling peaches didn't occur to you? Another opportunity for a nice brown
sugar, butter and rhum sauce...wasted.
