I like the part where you can really mess up a recipe and just say,
"well, no harm done, there is a finished dish ready to come out of the
oven" and like magic, there it is!!! And this one is perfect.

I once saw Emeril prepping a chicken for a vertical roaster and specified
that the chicken go on the roaster in the neck cavity. After the commercial
break, he takes it out of the oven and the chicken is head-up, bottom-down.

Another time he recommended 20% lean round chuck for burgers. I stopped
watching Emeril.

This was a vertical roaster, which tapers towards the top, not a beer can
roaster, but still. 40%, you say? Somebody did a study on this?

He's from Massachusetts. Rhode Island couldn't take him any longer than for
