I then use a metal tablespoon measuring spoon I have that has a nice edge on it. When possible I like to separate the eggs in the bowl I'm going to use for mixing or beating rather than making a separate container dirty. If I'm making something like a chiffon cake I break all the eggs into the bowl in which I plan to beat the whites. Then I scoop out all the yolks and put them in the other bowl in which the batter will be made.
