Nothing like using the shell if a piece of shell falls into the bowl
with the eggs. Takes a bit of practice, as my DD found out the hard
way, but she did eventually get it.

I have my own technique. I break as many eggs as
I'm going to separate into a bowl. I then use a
metal tablespoon measuring spoon I have that has
a nice edge on it. A yolk just fits in it perfectly
and I can easily separate the white stringy stuff
from the yolk by pressing against the edge of the
spoon which "cuts" it off right at the surface of
the yolk.

I've tried the shell method but found that often
the shell pricks the yolk. Not to mention that
the shell doesn't always break in a nice smooth
straight line and there are often jaggy points a
and also some small pieces of shell that can get
into the egg.

I've also tried those special egg separators and
they are kind of a pain to use and you can only
do one egg at a time and they don't fit over large
bowls so you have to hold it in one had and try to
crack your egg and separate the shell with one hand.
That's too hard to do. I'm not good at it and often
the yolk gets broken and the shell crushed trying to
do that. When possible I like to separate the eggs
in the bowl I'm going to use for mixing or beating
rather than making a separate container dirty.

If I'm making something like a chiffon cake I break all
the eggs into the bowl in which I plan to beat the whites.
Then I scoop out all the yolks and put them in the other
bowl in which the batter will be made.

Mom originally taught me to do the "shell game" method, but I found
hand-separating to be SO much easier and rarely ends up with broken
yolks.
