This bad boy got away from me when I wasn't looking -- it's 10" long and

It's cucumber dip. Slice & salt a tiny bit & drain. If you don't want that bother, then just peel some parts, seed if absolutely necessary, rough chop, sling in the fp with a hunk of cream cheese at room temp, a garlic clove or six and a carton or so of sour cream. I usually thicken mine with one (count'em) one envelope of plain gelatin dissolved in 1/4 cup of warm white wine or water. Can be spiced with a *little* cumin or mint. Or a little fresh basil. Go easy on the spices here. Makes a great cold dressing for spicy meat sammiches. Or dip or salad dressing. Edrena, who's still getting the hang of measuring stuff. |

I don't know the varietal. I think if I had a garden full of them (more than the one hill I have), it'd be a good pickler. Normally I pick them when they're about 8" long and about 1-1/4" diameter. At that point, I chop each long piece into slices. Slicing out the seeds, is just my way of doing it, like some squeeze out the seeds a tomato keeping it from being too juicy. A tip that some do use, is that they cut the cucumber into two long pieces, then use a melon ball-er to scrape out the seeds. Just another way to get the seeds out. I forget what vegetable I saw on ATK (America's Test Kitchen) the other day that they added salt to, but I was amazed at the amount of water that came out in 20 MINUTES. (Senior moment - sorry.) Sweet Pickled Ripe Cucumbers -- Senf Gurken (A ripe cucumber is not only large, but has turned yellow as well) 1 dozen ripe cucumbers 3 pounds sugar salt 1 quart vinegar 2 tablespoons mustard seeds 1 tablespoon cloves stick cinnamon Peel cucumbers, cut in two, lengthwise, scrape out seeds, sprinkle with salt and let stand overnight. Drain and dry. Make a syrup by boiling sugar and cloves, all tied in a bag. Boil cucumbers in this syrup only until they are glassy. They must remain crisp. Pack in sterilized jars and seal. I remember the Slippery Jims as being cut long and thin, sort of the size of a French Fry. Come to think of it, my mother also used to fry/sauté cucumbers but I don't remember much about it except the cooked mixture was a caramelized brown and had a sauce, kinda sweet and vinegary I think. I think it was called something like (forgive German spelling) Gesmeckta Gurken? If you find a recipe for something like this around Minneapolis, I would appreciate it if you would pass the recipe on to me. I never did get my mother's recipe box and a lot of what she cooked came from her head -- what she knew from her mother and the farm life around MN. Janet |
