Had a strange craving for turkey. My daughter has spent the last 45 minutes telling
me how it is not Thanksgiving, as if I couldn't figure that out on my own! lol It was relatively cool here today, so I figured, why not? Rather than make a whole bird, I bought a 1/2 breast and a couple thighs. Threw together a quick bread dressing (wheat bread, onions, celery, butter, egg, chicken stock, poultry seasoning, rosemary, and lots of black pepper), and laid the meat atop and put it in the oven. Took the other 2 thighs and set them to simmering with some onion and celery and stock for gravy. Figuring on making green beans with shallots and some smashed yukons to round it out. Yum on the turkey and dressing. Our local supermarket has fresh rotisserie
turkey breast daily. I think about dressing every time I go by there. After a trip to the Tennessee mountains, I had a craving for some good, fattening Southern comfort food. I made smothered steak, mashed potatoes, and fresh snap beans with little red potatoes. I was feeling lazy, so I used a breading of flour with seasoned salt. I breaded and browned 4 cubed steaks in a very small amount of oil, then drained the oil. I added a cup of beef broth, threw in some onions sliced into rings, covered and slow simmered for about 45 min. I removed the meat and thickened the gravy with a cornstarch/water mixture. Surprisingly, the cubed steak was very tender and tasty. Plenty of gravy for the potatoes. I topped this off with homemade cornbread. Now all I have to do is learn to eat grits and play the banjo ![]() I ate at a friend's house recently and she served a dish of green beans cooked with cranberries. It's a combo I never would have thought to cook together. It was awesome! Weather he Thunderstorms, torrential rain, hot, hot, hot, with double humidity. Absolutely miserable. I'm not sure how she cooked them. I asked her several times, but always got
interrupted before she answered. The cranberries were small and sweet and gave just a subtle flavor to the green beans. There were not many - just sprinkled throughout the dish. I have never eaten a raw cranberry, so I don't know if they are naturally sweet. If not, she must have let them sit in Splenda or sugar first. They looked as if they had cooked with the green beans because they looked well cooked. I have an email in to her now. I'll let you know what she says. Start with fresh green beans. I'm not proud of this, but since I wanted to
try a good Southern meal, I threw in a piece of bacon. Very good, but next time I will use my regular seasonings. As the beans started simmering, I added the smallest red potatoes I could find. I cooked everything for about 45 min. until beans were tender. The potatoes stayed whole and had a wonderful flavor. I didn't peel mine, but probably will if I serve it for guests. I am making Peter A's Pasta with artichoke hearts, to which I'm adding some leftover roast chicken. Guess I should make a green salad to go with that. nancy |

No offense intended, but what the hell kind of of green beans do you have that take 45 minutes to be tender? JAYzuzz! A salad of diced raw zucchini, chicory, basil, and tofu (all
fresh from the farmers' market) dressed with "Newman's Own Sesame Low Fat Ginger Dressing". Yes I know I'm cheaping out using bottled dressing but I'm only cooking for one this week. Steve |

Side dish is spaghetti squash. This should help keep the house cool, as I only used the microwave to cook the squash. 2 cut up chickens should feed me 4 or more times.
