Default violent reaction btwn oil & water

hi there, i was frying 3 cheese sausages in a frying pan when suddenly
there was what sounded like a violent explosion. the pan started
shooting out drops of boiling liquid.

expecting to see a blown up sausage but i saw it had nothing to do
with them. i then realized it had to do sometthing with the water &
oil in the base of the pan.

when i had put the pan on the cooker it contained a little water on
one side of the pan. i had added some drops of oil to the other side.

any idea what happened ? what did i do wrong? thx

Frying typically takes place at temps above 300 deg F. Water boils at
212 deg F. Water and oil do not mix. So, the little water bubbles
get instantly superheated beyond boiling by the hot oil and *POP*!...
a bursting steam bubble throws very hot oil everywhrere. IOW, keep
water away from frying oil.

i am not a troll stev. just because you think this is a trivial
question does not mean it is common sense. & probably you knew the
answer because years ago you had made the same mistake yourself.
