I had posted this link in a previous discussion, and have just now
looked at some of the recipes they have on there!

Anybody ever had Kangaroo?

Anyway, my mouth was watering reading all of these. I do need to add
some of them into my "things I will cook someday, or I will dine where
they are being served."

Kangaroo is wonderful. Here is what I posted last month:

I have cooked Kangaroo meat by pan-frying it many times and it was
always excellent, better than most any beef. The meat is very lean, of
course, but surprisingly juicy and tender. The taste is something
between beef and venison, but closer to beef. There has never been any
"off" taste or smell, nor any "gaminess". Kangaroo has to be cooked
rare, even very rare and even then it still won't be extinct.
