Default Results Grill this?


Here's what I did.
I marinated the salmon head in soy sauce, olive oil, fresh ginger and
fresh dill.

I put it on the grill on med low heat for probably a half an hour,
turning once.

Nice and moist.

I need to experiment with this a little more. Most of the fish was
perfect, but a small part of the interior was still a little under
cooked.

I went straight for the cheek meat. It is almost white and sooo sweet
and juicy.
I'm not sure, but I think I accidentally ate the tongue eeewwww!!!

Getting past some of the interior, like the gills, had a little ick
factor. I stopped digging for meat before I ran into anything that
resembled "grey matter"

I understand the appeal of the cheek meat, but honestly, the only time
we've ever cooked fish heads for eating was when they are attached to
the rest of the fish. ;-)

If I have just fish heads, I use them for stock.

Default Results Grill this?

It doesn't sound like you split the head in half before you cooked it,
and you should clean off the gills before you cook it. Split the head
it will cook a lot quicker and be easier to eat. The cheek is great,
but try popping out the eye (don't eat that part) and eating the fatty
tissue left in the socket for a real treat. You haven't lived until
you've tried it. If you know how to smoke salmon, you might also try
smoking the salmon heads, that was how I was introduced to it.
