Usually in intact nodules. When I use fresh ginger, I fine grate it. :-d Never made candied ginger, but have bought it when my sister was preggers. I believe that ginger is a "hot" herb and if we get a cold or the megrims, a slice or two of the candied makes a warming tea. Edrena |
