I dont' remember my grandfathers' favourite recipes but one of my father's favourite meals was young beef liver with bacon and onions. Also in Italy we make it. We call it "Fegato alla veneziana". You flour slices of liver and then you put them in a pan with very thin onion slices and bay leaves. Sadly, I don't have that one. I've made versions of it, but I've never really gotten it right. It was another she just eyeballed when she made it, and I never got any real handle on the proportions. The batter had a couple of eggs in it, flour, salt, and milk IIRC, and she usually fried them in a skillet of bacon grease, which I'm sure made a big difference in the flavor. Regards, Tracy R. |

My father's father grew and cooked an heirloom variety of tiny peas. He called them field peas. When he died, we lost them unfortunately.
